Sometimes, you just need a comforting treat. I like to eat healthy but I also like desserts and other indulgent foods. Whenever I make homemade desserts at home, I always try to make them a little bit healthier but still delicious! At a restaurant or if someone else makes a dessert, I don't really care what is in it and enjoy the treat as is. Over the years, I have learned some substitutions to make to make foods healthier when I cook them but still taste incredible.

Some of the swaps that I make often are using whole-wheat flour instead of refined white flour, less sugar, Greek yogurt whenever I can, pumpkin or banana in baked goods and desserts and more. It amazes me that food can still taste amazing with being healthier. These brownies are naturally grain-free and gluten free, are dairy-free and contain vitamin A and C rich pumpkin. The brownies do not at all taste like pumpkin and definitely do not have any pumpkin pie spice added so no worries, it won't taste like a Halloween treat.

The kids and I loved them and I actually doubled the batch so that the kids could snack on them. They have protein from large amount of eggs, antioxidants from the chocolate and fiber and vitamins from the coconut flour and pumpkin so I actually feel pretty good about them having these for a snack.

Yield: 16 brownies 

Healthier Fudgy Brownies

Healthier Fudgy Brownies are naturally gluten-free, grain-free and are made with pumpkin for a comforting and delicious treat! 
Prep Time:  10 minutes Cook time: 35 minutesTotal time: 45 mins

INGREDIENTS

  • Wet Ingredients
  • 6 large eggs
  • 1 cup maple syrup 
  • 1 15 ounce can pumpkin puree
  • 2 teaspoons vanilla extract
  • Dry Ingredients
  • 1 cup coconut flour
  • 1 cup cocoa powder
  • 1/2 cup sugar
  • 2 teaspoons baking powder

INSTRUCTIONS

  1. Preheat oven to 350 degrees F and spray a 9 x 13 baking dish with nonstick spray. 
  2. Place all wet ingredients into a large bowl and whisk together until smooth. Mix in all dry ingredients.
  3. Pour batter into pan and smooth out with a spatula.
  4. Bake for 35 minutes or until batter is set and not liquid any more.
  5. Let cool before cutting and cut into pieces.
Enjoy!

**They store really well in the fridge and taste awesome cold!
