Stone fruits are in season and my whole family is loving it! I can't get enough of peaches and nectarines especially, and always have a large bowl on hand. When the weather is hot, a big salad sounds amazing and I have the perfect summer dressing (or anytime really) to share with you. This salad is topped with marinated grilled Smithfield Fresh Pork Tenderloin and is super flavorful and delicious. The best part is - this meal is ready in just about 30 minutes!
The Jalapeno Honey Lime Vinaigrette is super special because it is my Great Aunt Emma's recipe. She passed away four years ago and we always think of her and remember her amazing recipes. She specialized in making carrot cake, beef stroganoff and this incredible Jalapeno Honey Lime Vinaigrette. I had to ask my mom for the recipe because I had not made it myself until now and am glad to now have the recipe to make whenever I want to.
Jalapeno Honey Lime Vinaigrette is slightly spicy, tangy and sweet all in the same bite. It goes well on any salad, tastes amazing on the fruit and makes a wonderful marinade for the Smithfield Fresh Pork Tenderloin. You can use whatever fruit you have on hand for the recipe, but if you can find stone fruits such as peaches, plums, cherries, nectarines and apricots, I highly recommend it because they taste amazing on this salad.
My whole family loved this salad and it was the perfect meal to pack up and bring to a picnic at our local park. We stored the dressing separately which worked well to keep the greens crisp. Also, you can either choose to grill the fruit or leave it fresh. Both work great!

INGREDIENTS
- Jalapeno Honey Lime Vinaigrette
- 1/2 cup canola oil
- 2 teaspoons lime peel, zested or finely grated
- 1/4 cup lime juice
- 2 tablespoons honey
- 2-3 teaspoons fresh jalapeno pepper, grated
- Optional: 1/2 teaspoon black pepper
- Grilled Pork and Fruit
- 1 pound Smithfield Fresh Pork Tenderloin
- 8 cups salad greens
- 1 peach, sliced
- 1 large plum, sliced
- 1/2 cup cherries, halved
- 2 apricots, sliced
INSTRUCTIONS
- Whisk together all ingredients for dressing.
- Trim any fat off pork and discard. Slice pork into 1 1/2 inch slices. Toss with 1/4 cup vinaigrette to marinate pork. Allow at least 15 minutes to marinate.
- Grill marinated pork on a grill mat or directly on grill for about 6 minutes per side until pork is cooked through.
- Slice fruit. Wash greens and divide between three bowls or plates. Top with sliced fruit.
- Cut pork into slices and add to top of salad. Drizzle with jalapeno honey lime vinaigrette.
