Summer is here and it's amazing! We've been visiting our local pool as much as possible which is a blast. Adalyn is finally getting more comfortable swimming and I'm loving teaching her how to swim. We enjoy taking bike rides, going to outdoor concerts, going on walks and much more. While we're having a blast, this leaves little time for cooking which is okay with me. Summer isn't about spending all day in the kitchen. It's about getting outside and enjoy time with family and most of all, having fun.

We love to eat well of course so I have to think of meals that take 30 minutes or less to make. Scratch that, I usually aim for 15 minutes or less. These Grilled Corn Salsa Pork Tacos come together in no time at all- maybe 20-25 minutes. I can water my garden while the food is on the grill and the kids can play outside in their water table. Living the dream!

I decided to grill the ingredients for this quick corn, pepper and onion salsa for maximum flavor. My 1 year old, 3 year old, husband and I all really enjoyed this meal so I would call that a win. To save time, I used a Smithfield Roasted Garlic and Herb Fresh Pork Loin Filet from Walmart which comes already marinated. I just took it out of the package, trimmed it, cut into ~1 1/2 inch slices and threw it on the grill. No extra marinating required. It is a lean cut of meat and it cooked really quickly. It took about 6 minutes per side on my grill. 


While the pork is grilling, I also grilled large bell pepper slices, white onions and corn on the cob. When the veggies are done grilling, finely dice the peppers and onions and cut the corn off of the cob. Squeeze some fresh lime juice, salt and garlic powder and your salsa is ready. I love corn tortillas but feel free to use whatever kind of tortilla you like for this recipe. When the pork is done, slice it up, toss on a toasted tortilla and top with salsa. Bam! Dinner is served.

The next day, we repurposed our leftover sliced pork and grilled corn salsa on a bed of kale. You can also use lettuce. It made the most delicious salad. I maybe even preferred it all on a salad because you could really taste each flavor.

Prep Time: 10 minutes Cook time: 15 minutesTotal time: 25 mins

INGREDIENTS

  • 1 1/2 pounds Smithfield Roasted Garlic and Herb Fresh Pork Loin Filet, trimmed
  • 1 red pepper, sliced in large pieces
  • 1 yellow pepper, sliced in large pieces
  • 1 orange pepper, sliced in large pieces
  • 1 onion, sliced
  • 2 corn on the cobs
  • 2 tablespoons olive oil
  • Juice from 1 lime
  • 1/2 teaspoon salt
  • 1 teaspoon garlic powder
  • 10 tortillas

INSTRUCTIONS

  1. Slice pork into 1 1/2 inch slices. Grill on a grill mat or directly on grill for about 6 minutes per side.
  2. Toss peppers, onions and corn in olive oil and grill until soft and veggies have char marks.
  3. Slice pork and finely dice vegetables. Toss vegetables with lime juice, salt and garlic powder.
  4. Toast tortillas on open flame of stove for about 30 seconds or on grill. Fill tortilla with sliced pork and grilled salsa. 
  5. Enjoy!

I am a huge fan of the Smithfield Marinated Fresh Pork. It is affordable. It is protein packed and quite lean (I do always trim mine). It cooks really fast and is a great alternative to chicken or beef. My entire family loves it and it is a very versatile protein. I typically buy my Smithfield pork plain but I really loved this garlic and herb pork which was full of flavor. I am going to be on the lookout for other flavors and pick them up when I see them. This pork freezes really well so feel free to buy a few and throw them in your freezer for when life gets busy. You can grill, roast, saute or slow-cook the pork and it is delicious any of these ways.
