Easy Vegetable Macaroni and Cheese
Easy Vegetable Macaroni and Cheese takes 15 minutes to make and is protein and fiber packed and loaded with your favorite green veggies!
We are knee deep in so many house projects here! I love it! One day, I randomly decided to strip all of the ugly wallpaper in our dining room that we've been meaning to do for the last 6 years but decided to do other projects instead and have two kids in that time. I finally got sick of it, looked it up on Google how to remove wallpaper and got to work. Let's just say that my husband was not pleasantly surprised when he walked in the door from work and said "No, no, no, no, no!!". Lol.
He didn't want me starting another project while we have others going on but it was time. He quickly got over it and helped me out and we got the project done in 5 days including removing all of the wallpaper, washing glue off the walls, spackling which took most of the time and then painting. The room is now a beautiful light grey and it freshened up the whole room so much. The whole project cost just $70 and was such a visual improvement. I'm in love!
I'll talk more about the other house projects late but for now, I want to introduce you to this Easy Vegetable Macaroni and Cheese. It's a little silly to even share it but I know that sometimes, my family needs easy meals and I'm guessing that yours does too. When we are super busy with house projects along with work, taking care of the kids and more, the last thing that I want to do is spend a lot of time in the kitchen.
That's where this Easy Vegetable Macaroni and Cheese comes in. I paired a boxed (yes, a boxed) macaroni and cheese with a variety of delicious veggies and it made the best 15 minute lunch. I choose a bean based macaroni and cheese (Modern Table Meals- not sponsored) that is much healthier than your typical blue-box mac and cheese. It is loaded with fiber and protein and makes it a lot more filling than white flour pasta.

INGREDIENTS
- 1 pound bean-based or whole-wheat macaroni and cheese
- 1 tablespoon olive oil
- 1 zucchini, shaved into ribbons with a peeler
- 1 cup peas
- 1/2 cup green beans, chopped
- 1/3 cup watercress, chopped
INSTRUCTIONS
- Cook mac andcheese according to directions.
- Saute zucchini, peas and green beans in olive oil for about 3 minutes.
- Top with watercress. Toss with mac and cheese and enjoy!

Mac & cheese is such an easy dish to sneak in some extra servings of veggies. I love baked mac & cheese and share one on my blog that include chicken and spinach. However, this recipe inspires me to try to add even more veggies to this recipe next time I make it!
