Rainbow Vegetable Sandwich
Rainbow Vegetable Sandwich makes the perfect lunch with a mix of rainbow vegetables and a ranch cream cheese spread all on whole-grain bread!
When I was younger, I have fond memories of going to our local fruit and vegetable market with my mom, brother, sister and I. We would load the cart up with all of the produce that we wanted which was always a huge overflowing cart because we loved our produce and were a hungry family of 5. When we got home, us kids would help my mom unload the groceries and immediately pull out all of the vegetables to make our favorite lunch: a loaded veggie sandwich.
For some reason, as an adult, I always forget to make these vegetable sandwiches which is crazy because I love them so much! I recently made another rainbow recipe and had a bunch of produce leftover so I decided to make these amazing Rainbow Vegetable Sandwiches. I seriously could not decide which spread to use: hummus or an herbed cream cheese. I texted my mom and sister and we all thought that both sounded good. So it's up to you, use what sounds best!
I didn't include meat or cheese on this sandwich but you could easily add a few slices of turkey lunch meat or sliced chicken breast. Feel free to use what you like! Also, use what vegetables you have on hand and prefer. I do like having at least one vegetable in each color because it looks so pretty.
Yield: 2 sandwiches

INGREDIENTS
- 4 slices whole-grain bread
- 1 tomato, sliced
- 1 red pepper, sliced
- 1 carrot, shredded
- 1 yellow pepper, sliced
- 1 cup baby spinach
- 1/2 cucumber, thinly sliced
- 1/4 red onion, sliced
- 1/2 cup red cabbage, chopped
- Cream Cheese Spread
- 1/4 cup neufchatel cream cheese
- 1 1/2 teaspoons dry ranch dressing mix
INSTRUCTIONS
- Mix together cream cheese and ranch dressing mix well.
- Lay out slices of bread and spread with cream cheese mixture.
- Layer rainbow vegetables on bread and eat!
