Asparagus and Cheddar Egg Bake with Hash Brown Crust
Asparagus and Cheddar Egg Bake with Hash Brown Crust makes the perfect weekend breakfast or is awesome for meal prep. Super easy and tasty!
I have the easiest recipe to share with you today that is super delicious! I made this for my family for Easter morning and they loved it. I love anything with asparagus and this recipe is sure to be enjoyed by all. I love the addition of the hash brown crust because it is super tasty and makes the recipe a little bit different!
It can actually serve more than 6 but I served generous sized pieces so it just fed 6. My 1 year old loved this as well. Anything with eggs makes my kids super happy. Anytime I can get some extra vegetables in is perfect!

Breakfast Pizza with Hash Brown Crust
Ingredients:
1/2 pound asparagus, ends trimmed
1 tablespoon olive oil
1 1/2 cups frozen shredded hash browns
12 eggs
1/3 cup milk
1 teaspoon garlic powder
1 teaspoon black pepper
1/4 cup green onions, diced
1/2 cup shredded cheddar cheese
Directions:
1. Preheat oven to 400 degrees and roast asparagus for 15 minutes. Meanwhile, spray a baking dish with nonstick spray. Place hash browns on the bottom.
2. Whisk together eggs, milk, black pepper and garlic powder. Mix in green onions.
3. Pour egg mixture over hash browns. Sprinkle with cheddar cheese. Top with roasted asparagus. Lightly press asparagus into the egg mixture so that the eggs lightly cover the asparagus.
4. Reduce oven temperature to 375 and bake for 25 minutes until eggs are completely cooked through.
5. Remove from oven and serve!
