Spinach, Tomato and Pine Nut Pasta
Spinach, Tomato and Pine Nut Pasta takes 15 minutes to make and is loaded with sauteed spinach and fire roasted tomatoes, toasted pine nuts and shredded Parmesan cheese!

You know when a meal is so good that you're sad when it's gone? That is what happened with this Spinach, Tomato and Pine Nut Pasta! I made a batch of it for Troy and I for lunch one Saturday afternoon and we ate it all in one sitting. I kept thinking about it all day what a great meal it was. So tasty, filling and best of all: quick! The whole meal is ready in just 15 minutes.
The next night, we were not sure what to make for dinner so I made another batch of this delicious pasta. Trust me when I say this, we are not creatures of habit with food. I rarely make the same dish twice (aside from things like tacos and other basics) so to make this two nights in a row means that we really loved it.
For the pasta, I used a lentil pasta but feel free to use whole-wheat pasta or another bean-based pasta if you prefer. I think that this would also be great with rice or quinoa as well. I kept it simple and used canned fire-roasted tomatoes. I used a bunch of chopped baby spinach leaves. I recommend using a high-quality shredded Parmesan cheese for maximum flavor. And don't forget the pine nuts! Those add a ton of flavor.

INGREDIENTS
- 8 ounces bean or whole-wheat pasta
- 1/2 cup pine nuts
- 1 tablespoon olive oil
- 1 tablespoon minced garlic
- 1 can fire roasted tomatoes
- 2 cups baby spinach, finely diced
- 1/4 cup shredded Parmesan cheese
- Start water for pasta and cook according to directions.
- Toast pine nuts in a pan on high heat for about 2 minutes- make sure they don’t burn! Turn off pan and remove from pan once browned.
- Saute minced garlic in olive oil. Add in a can of fire roasted tomatoes and fresh spinach.
- Toss pasta with tomato-spinach mixture and top with shredded Parmesan cheese.Enjoy!!
