Healthy Broccoli Salad
Healthy Broccoli Salad is made lighter with a creamy Greek yogurt dressing, Braeburn apples, cheddar cheese, grapes, walnuts and dried cranberries.
A couple of years ago, I became a big fan of broccoli salad. It was often served at picnics growing up but I wasn't really a fan of it until I learned how to make it my own way. I am not a fan of super sweet broccoli salad and prefer using mostly Greek yogurt for creaminess. I put together this healthier broccoli salad with Greek yogurt and a bunch of fun fruit, cheese and nuts for the perfect side dish for any meal.

I am not a fan of super sweet broccoli salad and prefer using mostly Greek yogurt for creaminess. I put together this healthier broccoli salad with Greek yogurt and a bunch of fun fruit, cheese and nuts for the perfect side dish for any meal.
This recipe uses all kinds of additions that make this salad extra delicious including crunchy Breaburn apples, walnuts and grapes, creamy sharp cheddar cheese, sweet dried cranberries and of course, nutrient dense broccoli. The dressing is simple. Just nonfat plain Greek yogurt, a little mayonnaise, apple cider vinegar, honey and black pepper.
This easy broccoli salad can be eaten right away but actually tastes the best eaten later that day or even the next day once the flavors come together. If you want to make it a complete meal, top with some chicken, grilled steak or even tofu. Feel free to swap the Braeburn apples for any kind of apple you like. I chose Braeburn because of their beautiful red skin and because they are super crunchy.

INGREDIENTS
- 6 cups chopped fresh broccoli
- 1 large Braeburn apple, finely diced
- 4 ounces cheddar cheese, cubed
- 1/4 cup walnuts, chopped
- 1/4 cup dried cranberries
- 1/4 cup grapes, finely chopped
- 1/2 cup nonfat plain Greek yogurt
- 1/4 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- 1 teaspoon black pepper
INSTRUCTIONS
- Whisk together the ingredients for the dressing.
- Mix all ingredients together and mix well with dressing.
Enjoy! Recipe tastes best if allowed to marinate for a few hours in the fridge.
