Peanut Chicken Lettuce Wraps
Peanut Chicken Lettuce Wraps are loaded with thinly sliced grilled chicken, red cabbage, carrots, jasmine rice, green onions, peanuts, lime juice and a flavorful peanut sauce!
I first tried lettuce wraps only about a month ago when my brother's friend's wife brought them to a Big Game party. They were delicious and I was totally intrigued. You could really taste the flavors of all of the ingredients because you were using a thin piece of lettuce instead of a bunch of bread or tortilla.
My mom made her own version of those lettuce wraps a few weeks later and now, I am making a different version. I can't get enough of peanut sauce on everything so I decided to make peanut chicken lettuce wraps.
These make a delicious hearty appetizer for a party such as for watching a March Madness basketball game or can be eaten for a meal. Your choice! They are easy to make and customizable. Feel free to use napa cabbage or red cabbage leaves for the lettuce wraps instead of lettuce leaves. Swap the chicken for tofu. Whatever you prefer!
I loaded these lettuce wraps with some of my favorite ingredients: thinly sliced grilled chicken, finely chopped red cabbage and carrots for crunch, jasmine rice, green onions, peanuts, lime juice and this easy peanut dressing. I used peanut butter powder for this dressing but my typical recipe uses 1/4 cup of drippy peanut butter instead. They both work awesome so pick your poison!
For this recipe, I used Matahma Jasmine Rice which is perfect for making these lettuce wraps more filling and also helping the ingredients stay together since it is a bit sticky. Pro tip for making rice: make the entire bag and freeze it in ziplock bags for rice ready in three minutes to save time. This is my favorite kitchen hack and I tell everyone I know!! It is a long grain rice from Thailand has has a light scent of Jasmine. It is perfect for Asian cuisine and other uses too. INGREDIENTS
- Lemon Garlic Chicken
- 1-1 1/2 pounds boneless, skinless chicken breasts
- Juice from 1/2 lemon
- 2 tablespoons olive oil
- 1 tablespoon vinegar
- 1 teaspoon garlic powder
- 1 teaspoon black pepper
- 12-15 large lettuce leaves or cabbage leaves
- 3/4 cup Matahma Jasmine Rice
- 1 carrot, thinly sliced or shredded
- 1 1/2 cups red cabbage, thinly sliced
- 1 bell pepper, thinly sliced
- 2 green onions, diced
- 1/2 cup chopped peanuts
- 1 lime, cut into wedges
- Peanut Sauce
- 1/4 cup drippy peanut butter or 1/2 cup peanut butter powder
- 1/4 cup sesame oil
- Juice from 1 lime
- 2 tablespoons vinegar
- 1 teaspoon garlic powder
- 3/4 teaspoon red pepper flakes
INSTRUCTIONS
- Mix all ingredients together for lemon garlic chicken and let marinate for at least 15 minutes. Grill for about 5 minutes on each side until chicken is cooked through.
- Meanwhile, cook rice according to instructions. Prepare all vegetables according to directions- sliced, shredded, etc.
- Whisk together all ingredients for peanut sauce.
- To assemble, lay a lettuce leaf out and fill with rice, chicken, vegetables and a drizzle of peanut sauce. Sprinkle with green onions, peanuts and a squeeze of lime juice.
