Sheet Pan Greek Chicken and Vegetables
Sheet Pan Greek Chicken and Vegetables is a delicious one-pan meal with roasted potatoes, onions, bell peppers, tomatoes, zucchini, artichokes and feta cheese with dill, lemon and garlic.

Who here loves washing the dishes? Me neither! That's why I made this one-pan meal of Sheet Pan Greek Chicken and Vegetables. It is so tasty and doesn't require too much work aside from chopping some vegetables. The garlic, lemon, oregano and dill gives this dish so much flavor. If you like Mediterranean food, you will love this!
When planning out this recipe, I had the hardest time deciding what vegetables to use. Obviously I decided on the ones that I included but other great choices would be green beans, kalamata olives, regular canned beans, etc. Feel free to use what veggies you have on hand. Just don't skip the marinade though. It is what takes the chicken from being boring and flavorless to a flavor explosion in your mouth.
Since it is the New Year and I know that many people want to focus on healthier eating (myelf included), I wanted to make a nutritious meal to share. I wanted to focus particularly on heart healthy meals. I used olive oil for the chicken and vegetables which is a heart healthy choice. I used boneless, skinless chicken breasts which are lean and low in saturated fats.
I also skipped pan-frying the chicken to keep it healthier. The vegetables and potatoes are vitamin and mineral rich and help fill you up. They are also great sources of fiber. I skipped the salt because with all of these flavors, you really don't need it.

INGREDIENTS
Lemon Garlic Marinade
- 1-1 1/2 pounds boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- Juice from 1/2 lemon
- 2 garlic cloves, minced
- 2 teaspoons oregano
- 2 large yellow potatoes, diced
- 1 small red onion, sliced
- 1 zucchini, sliced
- 1 orange bell pepper, sliced
- 2 tablespoons olive oil
- 1 cup grape tomatoes
- 1 cup canned artichoke hearts
- 2 teaspoons garlic powder
- Juice from 1/2 lemon
- 2 tablespoons fresh dill, chopped (or 2 teaspoons dried)
- Optional: black pepper, lemon slices
- Mix together ingredients for marinade and pour over chicken breasts. Let marinade for at least 20 minutes or 1 hour if possible.
- Chop all vegetables and preheat oven to 425 degrees. Toss potatoes, red onion, zucchini and bell peppers with olive oil on a sheet pan and mix well. Place chicken breasts on sheet pan and bake for 25 minutes.
- Add grape tomatoes and artichoke hearts to sheet pan. Drizzle on lemon juice and sprinkle on garlic powder and oregano and mix well. Bake for another 5-10 minutes until chicken is cooked through, vegetables are soft and slightly browned.
