Salt and Vinegar Smashed Potatoes
Salt and Vinegar Smashed Potatoes feature crispy roasted red skinned potatoes, red wine vinegar and big flakes of salt for that salt 'n vinegar flavor you love and the perfect side dish with just 4 ingredients!
I know that my readers (and people on Pinterest) are a fan of salt and vinegar flavored foods because you guys helped make my Salt and Vinegar Roasted Chickpeas one of the most popular recipes on this blog. Well, I'm totally with you and love all things salt and vinegar too. Roasted almonds, chips, vinegar on salads, etc. I love smashed potatoes because they are soft on the inside and crispy on the outside and decided to bring my favorite flavor to these smashed potatoes. I think that you're going to love them!
They make a great appetizer or side dish for any meal. I actually made these on Valentine's Day as part of a whole appetizer smorgasbord that my husband and I had and we both loved them. I told him, I'm going to make these ASAP for the blog! I was excited the next morning to eat the leftovers of these for lunch and they were gone!! My husband stole them and took them to work. They are so easy though that it was no big deal whipping up a second batch.
I tried these with red wine vinegar and with malt vinegar and I preferred the taste of the red wine vinegar best. Feel free to use what you have on hand though. I cooked these potatoes in the microwave before roasting them in the oven to save time which worked well. I cook them at a high temperature so that they get nice and crispy. So addictive!

Salt and Vinegar Smashed Potatoes
Salt and Vinegar Smashed Potatoes feature crispy roasted red skinned potatoes, red wine vinegar and big flakes of salt for that salt 'n vinegar flavor you love and the perfect side dish!

INGREDIENTS
- 12 baby red skinned potatoes
- 2 tablespoons butter
- 1-2 tablespoons red wine vinegar
- 1/2 teaspoon flaked salt
INSTRUCTIONS
- Preheat oven to 425 degrees. Cook potatoes in microwave until soft.
- With a large knife on it's side or bottom of a cup, firmly smash potatoes until they are about 1/2 inch thick.
- Melt butter in the microwave and pour over potatoes on a baking sheet. Make sure potatoes are coated in butter.
- Roast for 20-25 minutes until potatoes are crispy and browned. Remove from oven and drizzle with vinegar and sprinkle with salt.

These do look good! I've been lovin' my malt vinegar from Whole Foods for dishes like this, I need to try it with red wine vinegar.
