Roasted Tomato Soup
Roasted
Tomato Soup is just 5 ingredients, creamy despite having no dairy and is loaded
with flavorful roasted tomatoes, onions, garlic, basil and grilled cheese
croutons!
Looking through my archives over the
last 8 years, I cannot believe that I haven't shared a tomato soup recipe!
That's crazy! I make tomato soup all the time, especially in the summer. We
grow our own tomatoes, and some years, there are a ton. One way that we enjoy
using our tomatoes up is to make a big pot of tomato soup or tomato bisque.
As you know, tomatoes can be very
juicy and watery, and I’ve learned a couple of tricks to help with that. First,
I use roma tomatoes which are less juicy than other varieties. I added a couple
of roma plants in my garden last year (and will definitely do that every year)
because they are way better for cooking than any other variety. The second tip
works no matter what kind of tomato you are using: roast your tomatoes and
other vegetables. Roasting tomatoes helps to bring out their naturally sweet
flavor and dries up some of the liquid so you can have a nice, rich soup.
I have made this soup so many
different ways: adding a bunch of fresh basil for a tomato basil soup, not
blending it for a chunkier variety and adding plain Greek yogurt for a creamier
soup. Since we are blending this soup, do me a favor and leave the skins on,
okay? The skins are packed with vitamins and I hate to waste them. When you
roast and blend the skins, I promise you won't notice them.
Pair this easy tomato soup with
either a grilled cheese sandwich, grilled cheese croutons or a crusty delicious
bread for an awesome, comforting meal. This soup is actually very easy and can
be made in a small or large quantities, and even canned or frozen tomatoes. It
is loaded with flavor from roasted garlic, onions and basil. Yum!
To ensure that I got a well-blended
soup, I used the NutriBullet Balance nutrient extractor. Have you ever used
your phone to literally help you make a recipe? I haven't until now and wow… the technology is amazing! All you
need to do is open the NutriBullet Balance app on your smartphone and Bluetooth
will link to your Nutribullet. You can setup your dislikes, allergies, and
preferences on the app. Then, a bunch of recipe ideas will come up that you can
choose from based on your interests! They have recipes for smoothies, soups,
salad dressings, dips, and desserts.
The app will tell you which
ingredients and how much to add to the nutrient extractor in the right order.
You won't even need a measuring cup as the sensor will tell you when you've
added enough. As you add the ingredients, the nutrition information will be
calculated in real time.
It will automatically set the blend
time for the right consistency based on what you are blending. It will update
the nutrition information to a fitness app of your choice as well. It comes
with two colossal cups to blend in and flip-top to-go lids. What an awesome
product for the person in your life who is tech-savvy and loves to be healthy!
For this recipe, I decided to create
my own recipe on the app. It allowed me to type how much of each ingredient
that I was putting in and calculated the nutrition information. It was so crazy
starting to blend the soup right from my phone! So awesome! The app was easy to
use and I can't wait to try all of the awesome smoothie recipes on there! I got
some awesome ideas scrolling through them all.

Roasted Tomato Soup
Roasted Tomato Soup is just 5 ingredients, creamy despite having no dairy and is loaded with flavorful roasted tomatoes, onions, garlic, basil and grilled cheese croutons!

INGREDIENTS
- 9 Roma tomatoes, quartered
- 1 medium onion, thinly sliced
- 5+ garlic cloves, peeled
- 2 tablespoons olive oil
- Black pepper
- 1 cup low-sodium broth
- Optional: fresh chopped basil
Grilled Cheese Croutons:
- 4 pieces French baguette
- Freshly shredded cheddar cheese
INSTRUCTIONS
- Preheat oven to 425 degrees. On a sheet pan, drizzle tomatoes, onion and garlic with olive oil. Place tomatoes cut side up. Sprinkle with black pepper to taste
- Roast in oven for 30 minutes. Remove from oven and cool. Place roasted ingredients in Nutribullet Balance. Add in broth. Blend until smooth, about 1 minute.
- Top with freshly chopped basil.
- For the grilled cheese croutons, top baguette pieces with shredded cheese and broil for about 2-3 minutes until cheese is melted. Cut into bite sized pieces.

*Never put hot foods into the NutriBullet Balance, allow all items to cool before adding to the cup.
**Use as much garlic as you like! I used about 8 cloves and the garlic flavor was very pronounced and I was able to skip adding salt because of it.
