White Cheddar Macaroni and Cheese

White Cheddar Macaroni and Cheese is easy to
make, flavorful with sharp white cheddar cheese and is lightened up with hidden
cauliflower and whole-wheat noodles that kids and adults will love!
This time of year is all about the cozy foods! A cold salad just doesn't sound as good as a hot bowl of soup. I love to make foods that are lightened up and a balance of indulgent and nutritious. This macaroni and cheese and a whole head of cauliflower hidden in it but you wouldn't even know it!
I am lucky that my kids love vegetables but if yours don't, try them on this mac and cheese with hidden vegetables. You can also blend in carrots, butternut squash or other root vegetables. I wanted to keep this dish white so I skipped the orange vegetables this time. Cold and flu season are in full-swing so I wanted to make a cozy dish that you can eat when you have a cold that has nutrients to help you feel your best quickly.
Sickness has hit a couple of times in our household already this year and it was terrible. Especially when it goes from one family member to another- yuck! It felt like we were all sick the entire month of November. During my sickness, I found myself going out to the store 4 different times to get medicine (seriously) to help with my cold symptoms which is really annoying when you're sick. I just want to stay under the covers and cuddle with the kiddos when I'm sick.
That's why I made this
Sick Kit which is stocked with some of the things that we like having on hand
when we are under the weather. I picked them all up at Kroger and they are
great to store in a basket to use when the time comes that one of us is sick.
For my Sick Kit, I purchased all of these products at Kroger. I got the Campbell’s® Chicken Noodle Soup in a large family size for those days that nothing else sounds good. I bought the Lipton Bedtime Bliss Herbal Supplement Tea with chamomile, mint and orange peels which is perfect for drinking hot tea when you feel under the weather. When I was recently sick, I was drinking cup after cup of tea all day long. No Sick Kit is complete without saltine crackers- I bought the Premium Unsalted Tops for a lower sodium version. I have the Theraflu ExpressMax Severe Cold and Flu Syrup on hand for when we need it.
This recipe uses whole-wheat macaroni noodles for more fiber and nutrients. I skipped the white flour and used white whole-wheat flour for a more nutritious dish. Of course the cauliflower gives it a boost of vitamin C (commonly used to help prevent colds), vitamin K, folate and vitamin B6. I served this dish to Troy's cousin's family that came over and the meal was enjoyed by all! This dish tastes indulgent while being quite nutritious!
White Cheddar Macaroni and Cheese
Serving size: 1 1/2 cups
Servings: About 4
Approximate prep time: 10 minutes
Cook time: 20 minutes
Ingredients:
16 oz box of whole-wheat macaroniFor the cheese sauce
2 1/2 cups cauliflower, chopped
1/4 cup butter
1/4 cup white whole-wheat flour
2 cups 2% milk
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon black pepper
1 1/4 cups shredded white cheddar cheese
Topping
1/2 cup shredded white cheddar cheese
Directions:
1. Steam cauliflower until very soft- this can be done in the microwave or on the stove. Blend cauliflower with 1 cup of milk until smooth.
2. Meanwhile, boil a pot of water and cook noodles according to instructions.
3. On medium heat, melt butter until liquid. Add flour and cook for about 2 minutes while whisking continuously. Add the cauliflower sauce mixture and the rest of the milk and continue to cook on medium-low heat until thickened- about 5 minutes.
4. Remove from heat and add cheese, garlic, onion and black pepper and stir until melted.
5. Pour cheese sauce over noodles and mix well.
6. Transfer to a baking dish and top with additional cheese and broil for about 3-5 minutes until cheese is melted.

Wow! I love macaroni and cheese, and this looks like a winner. The only change I will make is the cauliflower. Leave it out of the recipe and it's perfect. Thanks much.
