California Breakfast Casserole

California Breakfast Casserole features layers of turkey sausage, tomato, avocado and hash browns for a hearty breakfast that can be made the night before and baked in the morning!
You know that I'm all about breakfast casseroles and egg bakes! I must have 10 of them on here and cannot stop making them. They are my favorite and according to you all, you like them too. I wanted to make something a little different from my typical super veggie-loaded casseroles (though this one has veggies too) and make one with sausage in it.
Even though sausage is of course a typical breakfast ingredient, it is not something that I cook with very often. I chose lean turkey sausage which worked so well in this recipe! It is so tasty and super filling as well.
This California Breakfast Casserole features layers of sausage, tomatoes, avocado and hash browns. A complete breakfast all in one baking dish! It has eggs baked right into it for protein. I ate this dish as is but you could also top it with ketchup or hot sauce. I make this casserole the night before, cover it with aluminum foil and bake it in the morning to save time in the morning. You can always make it the day of as well.
I wanted to make this casserole to appeal to anyone. If you are a vegetarian, feel free to use vegetarian sausage. That is the way that my mom made it before and we all had no idea that it even used vegetarian sausage. My mom made this for Thanksgiving morning last year and I knew that I had to share the recipe on the blog because it was so good!

INGREDIENTS
- 1 pound ground turkey sausage
- 3 roma tomatoes, sliced
- 2 avocados, sliced
- 12 eggs
- 1 cup milk
- 5 cups frozen hash browns, thawed
- 3/4 cup shredded cheddar cheese
- 1-2 teaspoons McCormick Good Morning Bell Pepper Salsa Breakfast Seasoning
- 1 teaspoon garlic powder
INSTRUCTIONS
- In a saute pan, cook turkey sausage until cooked through, about 5 minutes.
- Take a 9 x 13 baking pan and spray with nonstick spray. Sprinkle cooked sausage on bottom of pan and cover completely with sausage.
- Layer the tomatoes and avocado next.
- Beat together the eggs and milk. Mix in the hash browns, cheese and spices.
- Pour the hash brown mixture over the other layers.
- Bake at 350 for 40-50 minutes until eggs are cooked through and no liquid remains.
- Optional toppings: salsa, extra cheese, hot sauce, ketchup.
For this recipe, I used McCormick Good Morning Breakfast Seasonings. I used the Bell Pepper Salsa flavor which has onion, chili powder, paprika, salt, garlic, tomato, red and green pepper and jalapeno. What a time saver to have all of the spices in one and not need to pull out 8 different spices for a recipe!
These seasoning mixes give a ton of flavor to recipes while making cooking easier. Mornings are busy and these seasonings make getting a delicious, homemade breakfast on the table quicker and easier. The seasonings are perfectly blended and come in sweet and savory flavors to add flavor to any breakfast dish.
I can't wait to experiment with these other flavors such as Brown Sugar Vanilla which would be great in a baked oatmeal, Garden Herb which I would sprinkle in a veggie egg skillet or Apple Cinnamon which I would sprinkle over plain Greek yogurt and top with apples and granola.
