Bacon, Potato and Vegetable Egg Bake
Bacon, Potato and Vegetable Egg Bake is simple to make and is full of flavor for a delicious and satisfying breakfast or brunch that your whole family will love!
I am obsessed with egg bakes, frittatas and egg casseroles. When I see a new recipe for one, I always pin it! I enjoy making breakfast for my family (Troy and Adalyn) or for my extended family such as when we go up north to my parent's farm or for Christmas morning.
I had a bunch of ideas for what to include in this recipe and ultimately decided on bacon, potatoes and veggies. Please, do not feel like you have to make this recipe exactly as is. Feel free to customize it based on your preferences and on what you have on hand.
Vegetables that would work great are spinach, bell peppers, broccoli, tomatoes, kale, onion, mushrooms and more. If you do not like bacon, you can use sausage, turkey sausage or omit the meat all together. You won't miss it too much! Also, you can switch between the potatoes and sweet potatoes. I want to try both!

Bacon, Potato and Vegetable Egg Bake
Prep Time: 10 minutes
Cook Time: 30 minutes
Servings: 6
Ingredients
- 1 1/2 cups frozen hash browns
- 4 slices bacon, chopped
- 1 red bell pepper, diced
- 1 1/2 cups kale, chopped
- 1/4 cup green onion, diced
- 12 eggs
- 1/2 cup milk
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
Instructions
1. Preheat oven to 350 degrees.
2. In a skillet, sauté hash browns, bacon and vegetables until bacon is crisp- about 5 minutes.
3. Transfer mixture to a baking pan that is sprayed with nonstick spray.
4. Whisk together eggs, milk, pepper and garlic powder. Pour egg mixture over bacon and potato mixture.
5. Place pan in oven and cook for 30 minutes or until eggs are cooked through.
