Cranberry Cream Cheese Stuffed French Toast
Cranberry Cream Cheese Stuffed French Toast is the perfect make-ahead breakfast that is full of flavor and perfect to serve to a crowd!
I love make ahead breakfasts. My favorites involve baked oatmeal, baked egg casseroles or French toast bakes. They are all simple to make and perfect to serve to a crowd. The fact that you can make it the night before when you may have a little extra time so that it is ready to throw into the oven in the morning is so awesome.
I wanted to create a perfect holiday breakfast. This would be amazing on Christmas morning with some bacon, fruit, lots of coffee and maybe an egg bake. I love cranberries year round but know that most people prefer them around the holidays- they do really remind me of the holidays! This would be awesome around Thanksgiving as well to use up extra cranberry sauce.
Fresh cranberry sauce is so easy to make! Do not be afraid to make it- it is so much tastier and fresher than the canned versions! I used cream cheese because I knew that it would taste awesome with the cranberries for a cheesecake-like consistency and flavor. This dish turned out awesome and I would definitely make it again.
You can feel free to use your favorite berries if you want to do something other than cranberry. I think blueberries, strawberries or raspberries would be good. If you want to indulge a bit, I think that using light cherry pie filling would be really tasty!

Cranberry Cream Cheese Stuffed French Toast
Prep Time: 10 minutes
Cook Time: 35 minutes
Servings: 8
Ingredients
- 12-ounce bag fresh or frozen cranberries
- 3/4 cup water
- 1/4 cup maple syrup
- 14 slices whole-grain cinnamon raisin bread
- 4 ounces cream cheese, cut into 1/2 inch cubes
- 2 cups milk
- 6 eggs
- 1 scoop vanilla protein powder
- 2 tablespoons maple syrup
- 1 1/2 teaspoons vanilla
- 1 teaspoon cinnamon
Instructions
1. In a medium saucepan, combine cranberries along with water. Cook over medium heat until cranberries are bursting and soft, about 10 minutes. Add in maple syrup and cook another 5 minutes.
2. Spray a 9 x 13 casserole dish with nonstick spray. Cut bread into 1 inch cubes and place half of cubes in dish.
3. Top bread cubes with cranberry sauce and cream cheese. Cover with the rest of the bread cubes
4. Whisk together milk, eggs, protein, maple syrup, vanilla and cinnamon. Pour over bread cubes. Cover and refrigerate overnight.
5. Preheat oven to 350 degrees and bake for about 25-30 minutes until bread is baked through with no extra liquid. Top with maple syrup.
