Chocolate Cherry Oatmeal Cookies
Chocolate Cherry Oatmeal Cookies are made healthier with oats, whole-wheat flour and flax. They are a perfect sweet treat with dried cherries and dark chocolate chips that are soft, slightly chewy and have crisp edges.
The chocolate cherry obsession continues! One chilly, rainy day, the kids were napping and I had somehow finished my blog work for the day and decided that I wanted to make cookies. This is very unusual for me as I am definitely not a baker. I had a bag of dried cherries on hand which I have been obsessed with for most of my life.I decided to throw some dark chocolate chips in there for good measure. Even when making a dessert, I try to keep them a little bit healthier so I used white whole-wheat flour, oats, ground flax, nut butter and coconut oil in the recipe. They turned out awesome!
I cooked half the batch right away and froze the rest of the dough either for snacking or to bake into cookies. These are awesome for a healthier holiday baking treat or great for year-round. My house now smells delicious from these awesome cookies and I can't wait for Adalyn to get up and try them! She will be so excited since I almost never bake. Maybe I can bake after all???

Chocolate Cherry Oatmeal Cookies
Chocolate Cherry Oatmeal Cookies are made healthier with oats, whole-wheat flour and flax. They are a perfect sweet treat with dried cherries and dark chocolate chips that are soft, slightly chewy and have crisp edges.

INGREDIENTS
- 2 cups oats
- 1 teaspoon baking soda
- 3/4 cup white whole-wheat flour
- 1/3 teaspoon salt
- 1 1/2 tablespoons ground flax
- 1/2 cup coconut sugar (or regular)
- 1/4 cup softened (not melted) coconut oil
- 1/4 cup nut butter
- 2 tablespoons molasses
- 1 egg
- 2 teaspoons vanilla
- 1/2 cup dried cherries, chopped
- 1/4-1/2 cup dark chocolate chips
INSTRUCTIONS
- Preheat oven to 350 degrees and line 2 baking sheets with a baking mat or parchment paper.
- In a bowl, combine oats, flour, flax, baking soda and salt.
- In a large bowl, beat together sugar, coconut oil and nut butter until creamy using an electric mixer or hand mixer. Add in egg, vanilla and molasses and beat again.
- Mix in dry ingredients to wet ingredients. Mix in chocolate chips and dried cherries.
- Using a cookie scoop, scoop balls of dough onto baking sheet and leave space in between. Bake for 8-9 minutes. Remove from oven and let cool for 2 minutes before transferring to a wire rack to cool. Enjoy!
