Apple, Celery and Mushroom Stuffing
Apple, Celery and Mushroom Stuffing is a healthier family favorite that is loaded with sautéed mushrooms and onions, apples and celery!
My dad's specialty for Thanksgiving and anytime we want a turkey dinner is making his famous stuffing. It has apples, celery, onions and a whole bunch of sage. I have never made it myself and wanted to make it similar to his but included mushrooms. It turned out awesome! This stuffing with mushrooms and celery is so delicious!
What are your holiday plans? This year, we are headed to Troy's Aunt's house and I can't wait. Nothing like time spent with family. We always make it a potluck and all bring food to contribute. It's a great way of doing it that makes it so much easier on the host. We have hosted 3 out of the last 5 years and I'm a little sad that we aren't doing it this year. Maybe next year!

Apple, Celery and Mushroom Stuffing Ingredients
- Crusty wheat bread, day old, diced
- olive oil
- Mushrooms
- Onion
- Celery
- Apple
- Garlic
- low-sodium chicken broth
- Eggs
- Italian spice blend
- black pepper
- Parsley or other herbs to garnish
This stuffing would be perfect for Christmas, New Year's, a holiday party or anytime really. It would be great with ham, turkey or beef tenderloin for Christmas or Christmas Eve. Why limit delicious Thanksgiving-type dishes to Thanksgiving only? When it is made healthier and is full of veggies and fruit, you may as well make it more often.
Apple, Celery and Mushroom Stuffing Recipe
If you aren't the biggest fan of any of these items- apples, celery or mushrooms, feel free to replace that ingredient with something else. The sky is the limit! This recipe is vegetarian but you do not have to be a vegetarian to enjoy it. It is perfect for the vegetarian guest at your party because with the crumbles, it can actually be eaten as an entrée instead of just a side dish.

Apple, Celery and Mushroom Stuffing
Apple, Celery and Mushroom Stuffing is a family favorite that is loaded with sautéed mushrooms and onions, apples, celery and flavorful meatless crumbles for a vegetarian side dish!
prep time: 10 minutes Cook time: 50 minutes Total time: 1 hour
INGREDIENTS
- 6 cups crusty wheat bread, day old, diced
- 1 tablespoon olive oil
- 2 cups mushrooms, sliced
- 1 medium onion, diced
- 3 stalks celery, diced
- 1 large apple, diced
- 3 cloves garlic, minced
- 2 1/2 cups low-sodium chicken broth
- 2 eggs
- 1 tablespoon Italian spice blend
- 2 teaspoons black pepper
- Parsley or other herbs to garnish
INSTRUCTIONS
- Preheat oven to 350 degrees and toast bread cubes for about 10 minutes on a large sheet pan until crisp but not burnt.
- Heat oil in a sauté pan and sauté mushrooms, onions and celery until soft- about 3-4 minutes. Add in apple and garlic and cook for another 2-3 minutes.
- In a bowl, whisk together the eggs, Italian spice blend, black peppers and chicken broth. Stir in vegetable mix and bread pieces.
- Spread stuffing in a nonstick sprayed 9 x 13 baking dish and cover with aluminum foil.
- Bake for 30 minutes. Uncover and bake another 10-15 minutes until top is golden and toasted- not burnt though!
- Garnish with parsley or other herbs as desired.
