Breakfast Tacos with Fresh Tomato Salsa
Breakfast Tacos with Fresh Tomato Salsa are ready in 10-minutes and are filled with scrambled eggs, black beans and homemade, flavorful salsa made with garden fresh tomatoes!

This week, I've been craving something that I don't normally crave as much: savory breakfasts, particularly those with salsa and eggs. We have eaten some variation of this breakfast three times this week and I totally plan on making something similar again tomorrow. I love making Mexican-style breakfasts and this one is super tasty.
We have zillions of tomatoes coming from our garden right now so pretty much every meal needs to incorporate tomatoes in one way or another. I have gotten pretty creative with them so that we do not get bored. I thought that I wasn't the biggest fan of fresh tomato salsa (like pico de gallo) until my sister recently brought a gallon (yes, a GALLON) of it to a party. I ate it all evening and then snacked on it the next day as well.
When I got home, I texted her for the recipe and came up with this. We are now the proud owners of a gallon of salsa. We ate it this morning with these super delicious and easy breakfast tacos and I am bringing it to an outdoor concert tonight and then to my parent's farm tomorrow to use in another meal. Can't get enough! The key to making this salsa super tasty is fresh cilantro (which I normally hate but it enhances this recipe a ton), fresh jalapeno, the best tomatoes you can find, fresh garlic, fresh peppers and red onion.
We made these on a morning when Adalyn was at my mother-in-law's house so we had a quiet morning with just us and the baby. It was so weird having so much quiet!! We made Café Bustelo® coffee which is new-to-us and we really enjoyed it. It is a full-flavor, bold coffee which I recently fell in love with. I used to like mild blends and then we went up north with Troy's cousin and I started loving dark, strong coffees and haven't wanted to turn back since. It is also great to have in my stainless steel mug that keeps my coffee hot for hours while typing away at this post! I brewed mine in our Keurig and it came out perfectly. I added a bit of 2% milk to mine and enjoyed it that way.

Breakfast Tacos with Fresh Tomato Salsa
Servings: 2
Cook and prep time: 10 minutes
Ingredients:
1-2 teaspoons butter
4 eggs
1 tablespoon milk
4 small corn tortillas
1/2 cup low-sodium black beans
Toppings: chopped red onion and cilantro
Fresh Tomato Salsa
3 large tomatoes, cored
1/2 small red onion
2 cloves garlic, peeled
1 jalapeno, sliced with seeds removed
1 green bell pepper
1/4 cup cilantro
1/2 teaspoon salt
1 teaspoon fresh ground black pepper
1 large tomato, chopped
1/2 green pepper, chopped
Instructions:
1. Blend together all ingredients for salsa except for chopped tomato and green pepper until smooth. Taste and adjust ingredients as needed. Stir in chopped tomato and green pepper.
2. In a frypan, melt butter. Whisk together eggs and milk. Pour eggs into frypan and scramble.
3. Heat black beans.
4. Toast tortillas for about 30 seconds on each side on an open burner until lightly browned.
5. Take a tortilla and fill with scrambled eggs, black beans, a spoonful of salsa, red onion and cilantro.
Enjoy!
Notes: Salsa recipe makes a lot more than you will need for these tacos. Save for later and enjoy with tortilla chips or whatever you like.
