Frozen Pineapple Mojito

Frozen
Pineapple Mojito is a lighter take on a typical mojito with just 5 ingredients:
frozen pineapple, fresh lime juice, orange juice, mint leaves and rum for a refreshing
beverage!
Summer is not over just
yet! I’m soaking up every single summer memory and moment that I can. We are
still taking trips to the pool, visiting local lakes, playing on playgrounds,
taking lots of mini-trips and enjoying all of our time outside. The same goes
for food. I’m cooking with all of the best summer produce and enjoying all the
frozen treats and drinks that I can get my hands on.
Just yesterday, we got
frozen custard at a place that Troy grew up going to and has been wanting me to
try, we hiked SIX miles, ran through the sprinkler and had yet another frozen
treat. I love it! Summer is easily my favorite season because there is so much
to do and it is so much fun.
I have a summer bucket
list going and we have been slowly ticking things off of it. One of those
things included making frozen boozy drinks and enjoying them on our patio
together. I created this delicious frozen pineapple mojito on a hot summer day
and it is the perfect drink to have when the weather is hot. Troy and I enjoyed
these in the evening outside and enjoyed our time together.
I am typically not much
of a mixed drink person but the one drink that I do enjoy is a mojito. This one
is made a little healthier than normal with frozen pineapple and a splash of orange juice for sweetness to
use in place of the traditional simple syrup used. It takes about 2 minutes to
make. Just throw some fresh lime juice, frozen pineapple, Bacardi Superior rum, orange juice and mint leaves in the blender and hit the on button. Really! It’s as easy as
that! If you want to make it bubbly and less strong, you can mix in some coconut
seltzer water.
You could make these
frozen mojitos with frozen mango or strawberries as well. The Bacardi provided
a great flavor in this beverage. It is very versatile and can be used in many
different beverages. The pineapple was super refreshing along with the lime and mint. The orange juice pretty much just blends in but is good for helping to blend the beverage.
Bacardi also has Bacardi Banana that would be great in different beverages. I am thinking something tropical and creamy- maybe with coconut milk! I think that the Bacardi Banana could actually work in this recipe as well if you used coconut with it for a different take.

Frozen Pineapple Mojito

Ingredients:
2 cups frozen pineapple
1/2 cup lime juice
1/2 cup orange juice
1/2 cup orange juice
1/2 cup Bacardi Superior
Rum
4-5 mint leaves
Directions:
Blend all ingredients in a blender until smooth. Enjoy!
