Healthy Fruit Crisp
Healthy Fruit Crisp is the perfect, easy dessert with your choice of fresh fruit! Made lighter with whole-wheat flour, less sugar and coconut oil.
Nothing screams summer like a homemade fruit crisp. Even better if it is a healthier one! I am so not a baker but fruit crisp is something that I can do! I made this version with less sugar than a typical crisp, used coconut oil instead of butter and swapped white whole-wheat flour for white flour for a healthier yet still delicious crisp.

I hate to toot my own horn but this is the best crisp I've ever had! It tastes so indulgent but is quite light. Make sure you use ripe fruit for the best flavor and sweetness.
I recently came across the best deal on fruit. A huge box of plums and white nectarines that were slightly dented for $2. Like 20-30 pounds of fruit for $2! I felt like I won the lottery. We have been eating these like crazy! We have had white nectarine overnight oats (using my Peaches and Cream Overnight Oats recipe), white nectarine hot oatmeal and lots of fruit plums and nectarines for snacks. I love it and so does my daughter. She keeps opening the fridge and stealing them when I'm not looking.
To use up some of our delicious bounty, I decided to make a fruit crisp. I love making crisps because it is pretty easy to make them fairly healthy and they are customizable depending on what fruit you have on hand. Instead of calling this a Plum and Nectarine Crisp, I decided to call it a fruit crisp so that you can use whatever fruit you have on hand this summer (or any time of year!)
Healthy Fruit Crisp
Ingredients:
8 cups of fruit, chopped (plums, peaches, berries, nectarines, etc.)
1 tbsp cornstarch
1 cup old-fashioned oats
1/2 cup white whole-wheat flour
2 tsp cinnamon
2 tsp baking powder
1/4 cup brown sugar, lightly packed
1/4 cup coconut oil
Directions:
1. Preheat the oven to 350 degrees and coat a 9 x 13 pan with nonstick spray.
2. Heat coconut oil for about 30 seconds in the microwave until melted.
3. Combine all ingredients except for the fruit and cornstarch and mix well.
4. Mix together the fruit and cornstarch and add the fruit to the pan and then top with crisp mixture.
5. Bake for 30 minutes or until the fruit mixture is bubbling and the oat mixture is crunchy.
