Strawberry Rhubarb Oatmeal
Strawberry Rhubarb Oatmeal is the perfect breakfast with a fresh, tart strawberry rhubarb sauce and is topped with fresh strawberries. Ready in just 15 minutes!
In May and June each year, strawberries and rhubarb are at their best. Rhubarb cooks up so deliciously in any kind of desert or breakfast dish and strawberries are at their sweetest. Just look how dark and delicious these strawberries look (you will just have to trust me that they tasted amazing too!).
When I saw that a pound of rhubarb was coming in my produce delivery, I knew that I had to plan something delicious to make. I was so excited as it is my first rhubarb of the season. Last year, I made these strawberry rhubarb shortcakes that were delicious too.
I asked on The Nutritionist Reviews Facebook page whether you guys would rather see a strawberry rhubarb oatmeal recipe or a strawberry blueberry Dutch baby recipe because I could not decide for the life of me which to make. The strawberry rhubarb oatmeal won by just a bit. Don't worry though- I will still be making the Dutch baby but you will have to wait until the end of June. : )
I cooked my oatmeal in the microwave as I always do as a time saver. If you prefer stove top oats, you can cook them that way. I included chia seeds and ground flax seed in my recipe for extra nutrition but this is optional.
Also, I doubled this recipe for the strawberry rhubarb sauce because I knew that I would want to eat a bunch of it- it is so good! I can eat it plain. I used just 1/4 cup of honey for my double portion (or 2 tablespoons if you're following the directions) but you can feel free to use more if you don't like things too tart. I love a tart sauce so I kept it light on the honey.
This Strawberry Rhubarb Oatmeal is so good with a small sandwich such as the Sandwich Bros. of Wisconsin Flatbread Pocket Sandwiches which come in a few snack varieties including the Angus Cheeseburgers, Chicken Melts and Gyro Sliders.
If I'm on the go, I like heating these up in the microwave for a quick snack or part of my breakfast. The lunch varieties are great on my maternity leave because I am always short on time during the lunch hour and want to get something in my stomach quickly. They are small enough that you can pair them with another dish such as this Strawberry Rhubarb Oatmeal and it will not be too overly filling.
Some other recipes that pair well with these sandwiches are my Panzanella Salad, Tropical Overnight Oats and Greek Chopped Salad with Roasted Chickpeas, Pictured above is the Egg White and Turkey Sausage variety which is my personal favorite. After I took the photos for this recipe, Adalyn took the sandwich off the counter (right after we had just eaten breakfast too) and ate the whole thing! Haha! Strawberry Rhubarb Oatmeal
Cook Time: 10 minutes
Total time: 15 min
Servings: 2 (with extra sauce leftover!)
Ingredients
- 2 cups strawberries, sliced
- 2 cups rhubarb, diced
- 2 tablespoons honey
- 1 1/2 teaspoons cornstarch
- 1 cup oats
- 1 1/2 cups water
- 1 tablespoon chia seeds
- 1 tablespoon ground flax seeds
Instructions
1. In a saucepan, add strawberries, rhubarb and about 1/2 cup of water. Cook over medium-high heat for about 5 minutes.
2. Stir in honey and cornstarch. Cook until rhubarb breaks down from pieces into a smooth sauce.
3. Meanwhile, combine ingredients for oatmeal and cook according to preference (2 minutes in the microwave will do).
4. Top oatmeal with strawberry rhubarb sauce and fresh strawberry slices. Enjoy!
