Flourless Banana Nut Pancakes
Flourless Banana Nut Pancakes require only 4-ingredients, are ready in 10 minutes and are nutritious with pecans, bananas, oats and eggs. That's it!

It was late one Saturday night when I was on Facebook and saw a video someone making 2-ingredient pancakes with bananas and eggs.
Since I like to make a big batch of these during my meal prepping, I was on the lookout for great food storage containers. I love the Rubbermaid BRILLIANCE products to pack these pancakes up in.
When I return to work, I always pack my breakfast and lunches and these are great for taking on the go. They are 100% leak-proof guaranteed which is so important because it is so yucky when your lunch leaks all over your lunch bag (trust me, it has happened many times to me).
The material is stain resistant and resists odors- you don't want to be tasting onions when you are eating chopped fruit for example. They are super clear which makes seeing what is in them very easy- no lost containers of who knows what kind of food in the fridge. They stack perfectly and come in 5 different sizes. They also have vents so that you can microwave with the lid on and help reduce splatters and are made with a BPA free material.

My husband, daughter and I all loved them. That is a win in my book! Life is pretty busy for us right now. I am home on maternity leave with a toddler and a newborn and mornings are the busiest time of day for us. Baby wakes up ready to eat. The toddler has to go to the bathroom and is starving. My dogs need to go outside and be fed. I need to go to the bathroom, etc. etc. Therefore, getting breakfast on the table needs to be quick.
I love doing a bit of meal prep to keep myself sane and have healthy food available at all times. Today, I spent a little bit of time making chicken tortilla soup for dinner and made plenty of it so we can have leftovers. I also cooked up some steamed sweet potatoes and chopped some carrots and cucumbers for healthy snacks.
These flourless banana nut pancakes can be made ahead of time and reheat really well. You can top them with a little maple syrup or nut butter. I like mine with extra bananas, syrup and chopped pecans. Yum! A delicious and filling breakfast to meal prep to save you time in your busy schedule. Feel free to double or triple the recipe so you have plenty leftover for all week.
Flourless Banana Nut Pancakes
Total time: 10 minutes
Servings: 3 (3 pancakes per serving)
Ingredients
- 2 very ripe bananas, mashed with a fork
- 1/4 cup quick oats
- 4 large eggs
- 3 tablespoons pecans, chopped
Instructions
1. Mix together mashed banana, eggs, oats and pecans.
2. Heat a nonstick skillet or griddle. Spray with nonstick spray. Spoon the batter onto pan to make about 9 pancakes total.
3. Cook for about 3 minutes on each side. Flip and cook an additional 2 minutes.
4. Top with toppings of choice and enjoy!
**Batter is quite thin so make sure that pan is hot before placing batter on pan so it doesn't spread too much.
