Mini Bell Pepper Nachos
Mini Bell Pepper Nachos are a healthier vegetarian version of your favorite appetizer, ready in just 15 minutes and are topped with cheddar cheese, tomatoes, green onions and more!
I love making fun dinners on Fridays! During Lent, since I am Catholic, I have to make these dinners vegetarian. This is not an issue most of the time as we often eat meatless meals. Awhile ago, I put the idea for bell pepper nachos on my "must-make" recipe list and decided that now was the perfect time to try these out.
My sister recently made bell pepper pizzas which is a really neat idea as well. Instead of a bread crust, you just use a bell pepper. For this recipe, I decided to use mini bell peppers since I thought that they would be easier to pickup than a large bell pepper.
You can fill these with your favorite nacho toppings. I chose to use MorningStar Farms® Grillers® Crumbles™ in mine along with cheddar cheese, plain Greek yogurt instead of sour cream, fresh sliced jalapenos, green onion and tomatoes.
You can also use black beans, meat, a different kind of cheese, corn, onions, refried beans, salsa or hot sauce. They are a healthier option than typical nachos and are more of a complete meal instead of just an appetizer.

Mini Bell Pepper Nachos
Prep Time: 5 minutes
Cook Time: 10 minutes
Servings: 4
Ingredients
- 1 pound mini bell peppers, halved and seeded
- 1 cup cooked ground beef or vegetarian crumbles
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 cup shredded cheddar cheese
- 1/4 cup plain Greek yogurt
- Toppings: sliced green onions, diced tomatoes
Instructions
1. Preheat oven to 400 degrees.
2. Mix together crumbles, chili powder, cumin and garlic powder.
3. Spray a baking sheet with nonstick spray and lay bell peppers on tray. Top with crumbles and cheese. Bake for 8-10 minutes until cheese is melted and bell peppers are slightly softened.
4. Top with Greek yogurt and your choice of toppings.
