When I first dreamed up this carrot cake banana bread, I had planned for it to have the texture of a bread. How it turned out is a like a delicious, dense carrot cake with a perfect frosting. I could not be happier with the results! It is a healthier carrot cake that is perfect for a celebration or is healthy enough for a breakfast.
I made this during my daughter's naptime one day and when she woke up, I told her that I had a surprise for her. She was so, so excited for this "cake" and we enjoyed a big slice together. It was a nice mother-daughter bonding time.
Instead of shying away from telling Adalyn that vegetables are in something, I always let her know that they are there. I said "look at all of those carrot pieces, aren't they pretty?". I want to teach my daughter to love veggies, not to shy away from them. She absolutely loved it! She was convinced that it must be someone's birthday since we were having cake though.
For this recipe, I decided to make it healthier by using 100% whole-wheat flour- you won't be able to tell the difference. I lowered the fat in the recipe by swapping apple sauce for butter. Trust me, you cannot tell that this is any healthier than traditional carrot cake!
Carrot Cake Banana Bread with Cream Cheese Frosting
Prep Time: 10 minutes
Cook Time: 35 minutes
Yield: 12 slices
Ingredients
- 2 cups whole wheat flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 2 medium ripe bananas, mashed
- 1/3 cup maple syrup
- 1 egg
- 1 teaspoon vanilla
- 1/2 cup unsweetened applesauce
- 3 large carrots, shredded
- 1/3 cup milk
- 3 tablespoons chopped pecans
- 4 ounces reduced-fat cream cheese
- 1/4 cup vanilla Greek yogurt
- 3/4 teaspoon cinnamon
Instructions
1. Preheat oven to 350 degrees. Spray a bread pan with nonstick spray.
2. Mix together all ingredients for bread except for pecans.
3. Pour into bread pan and bake for about 35 minutes until when a toothpick is inserted, it comes out clean.
4. Remove from oven and let cool for 15 minutes. Remove from pan.
5. Mix together cream cheese, Greek yogurt and cinnamon and spread over bread. Sprinkle with pecans.
6. Slice and enjoy!
