Spiralized Antipasto Salad
Spiralized Antipasto Salad takes a fun and unique spin on traditional antipasto salad with spiralized vegetables including peppers, onions, carrots and cucumbers, pepperoni, cheese, tomatoes, and a homemade Italian dressing!
Troy and I had the rare opportunity recently to go out to dinner on a date night, just the two of us. It was really nice to not have to say "sit down", "eat your food" and a zillion other things to our two year old during the meal. But during our time out, we both agreed that each night, it feels like we have a date night at home after Adalyn goes to bed.
I know that a lot of couples do not have time to spend each evening together but Troy and I are so lucky in that we both get home from work by about 4 PM and can spend almost all evenings together. Adalyn goes to be around 7:30 and each evening is a mini-date night at home. We typically choose one of our favorite shows to watch and just hang out with each other. I wouldn't give this time up for anything in the world!
Every so often, such as for Valentine's Day, we wait to eat until after Adalyn goes to bed so that we can have a dinner just the two of us. This is rare as family dinner is extremely important to both of us but sometimes, can be really nice.
I created this delicious spiralized antipasto salad with Troy in mind. He loves antipasto salad so much so I knew he would enjoy this. I was right! We love using our spiralizer to come up with unique and delicious recipes. You can use other vegetables such as zucchini, squash, broccoli and more to spiralize and use in this salad. If you don't have a spiralizer, you could always chop the vegetables instead.
I whisked together a quick homemade Italian dressing for this and it was perfect! The key that I often miss in making a salad dressing delicious is a pinch of salt. It really brought out the flavor in this recipe. Of course with an antipasto salad, you need a bit of meat and cheese so I used turkey pepperoni and cubed pepper jack cheese. You could also use mozzarella cheese, salami or ham.
Spiralized Antipasto Salad
Prep Time: 10 minutes
Servings: 4
Ingredients
- 1 red bell pepper, spiralized
- 1 cucumber, spiralized
- 1 small red onion, spiralized
- 1 green bell pepper, spiralized
- 2 large carrots, peeled and spiralized
- 1/4 cup pepper jack cheese cubed
- 1/4 cup turkey pepperoni, diced
- 1/2 cup cherry tomatoes, halved
- 3/4 cup low-sodium garbanzo beans, drained and rinsed
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 1/2 teaspoon garlic powder
- 2 teaspoons Italian seasoning blend
- 1 teaspoon black pepper
- 1/4 teaspoon salt
Instructions
1. Whisk together all ingredients for Italian dressing.
2. Combine all salad ingredients and mix together. If spiralized vegetables are very long, you can trim them with scissors.
3. Toss salad with dressing and serve immediately. Enjoy!
