Roasted Beets and Oranges with Baked Tilapia
Roasted Beet and Orange Salad with Tilapia is a perfect flavorful meal for a weeknight or to serve to guests. Loaded with flavor, this meal will be sure to delight your taste buds!
I love the holiday season. Many years, I am so busy that fall and the holidays sneak up on me but this year was a lot calmer than the past couple. Two years ago, Adalyn was just a couple of months old. Last year, I was traveling a ton around the time for several blog trips I was invited to. This year, I have had time to really enjoy the season with my family which I absolutely love!
I have been cooking seasonally with lots of Apple Butternut Squash Soup, Roasted Apples and Root Vegetables and Slow Cooker BBQ Chili (made with ground turkey for my sister). It has been a delicious season. During the summer, I do not want to spend a lot of time in the kitchen but in the fall and winter, I love smelling a pan of roasting veggies or something cooking in my slow-cooker.
I thought up this recipe idea over the summer and couldn't wait to make it. I love roasting beets and wait to do so until it cools down because it really heats up the house. Oranges are coming into season and will be the most flavorful and sweet that they are all year.
I have been trying to eat more fish, especially during my pregnancy for omega-3 fatty acids. I am not a fan of "fishy" seafood so I stick to the more mild options in terms of flavor. For this recipe, I roasted up a pan of fresh beets, sliced up some oranges, topped it with a tilapia filet, sprinkled with fresh feta cheese and drizzled a light orange sauce on it.
This recipe is pretty easy to make- especially if you roast the beets ahead of time. If you roast them over the weekend, they can last all week long. Just watch your fingers when cutting them up as your fingers may be stained purple for a day or so.
Roasted Beets and Oranges with Baked Tilapia
Prep Time: 5 minutesCook Time: 45 minutes
Servings: 4
Ingredients
- 4 large beets, peeled
- 2 tablespoons olive oil
- 4 Bumble Bee SuperFresh® Tilapia with Garlic and Extra Virgin Olive Oil
- 2 oranges, peeled and sliced
- 1/4 cup feta cheese
- Juice from 1/2 orange
- 1/2 teaspoon black pepper
Instructions
1. Preheat oven to 425 degrees. Cut beets into slices and toss with olive oil. Roast until soft- about 45 minutes.
2. Cook tilapia according to directions on package- bake in parchment paper for 18 minutes at 400 degrees.
3. Layer sliced beets and oranges on a serving tray. Top with baked tilapia.
4. Sprinkle with feta cheese and black pepper. Drizzle fresh orange juice on top of dish. Serve immediately.

For this recipe, I used Bumble Bee SuperFresh® Tilapia with Garlic and Extra Virgin Olive Oil which is fresh tasting and so easy to make. They come frozen and are pre-seasoned which was nice because I am never sure how to season fish well. This flavor has black pepper, fresh garlic, sea salt and extra virgin olive oil.
To cook it, you just pull it out of the freezer and baked it in its own parchment paper baking pouch that it comes in and put it in the oven. So easy and it tastes delicious! Full of protein and a lower-fat option compared to many meats. It is free of fishy smells since it goes from freezer to oven which makes my pregnant nose very happy.

The Bumblebee Superfresh Tilapia sounds great! However, it doesn't appear that I can find it even 100 miles from here!
