Apple Pecan Baked Oatmeal
Apple Pecan Baked Oatmeal is easy to make, reheats well, and makes a delicious breakfast. It is filled with soft baked apples, crunchy pecans and warm cinnamon flavor!
I love baked oatmeal! It is so easy to make, totally customizable depending on what flavor you like, and can be made ahead of time for easy breakfasts all week. Although baked oatmeal is, of course, similar to oatmeal, it seems so much different! It is not as gooey as oatmeal and is cut into pieces and topped with syrup or nut butter. It is perfect to serve at brunches and easy enough for the work week. I love it!
I have made a bunch of different baked oatmeals on the blog including pina colada, salted caramel, carrot cake and fruit tart baked oatmeals. Since it is the holiday season, I decided to make an apple pecan baked oatmeal. This would be perfect for Christmas morning to serve to your family or great for just baking up during the holiday season for easy breakfasts.
Oats are rich in whole-grains and fiber. I added pecans for healthy fats, protein, and fiber. Feel free to use whatever kind of nut you prefer. If you want to be indulgent, you can add a light drizzle of caramel sauce for a caramel apple baked oatmeal!

Ingredients
- 3 cups oats
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons cinnamon
- 1 1/3 cups milk
- 2 eggs, beaten
- 1/4 cup light syrup
- 1 large apple, diced, microwaved for 1 minute
- 1/4 cup pecans, chopped
- 3 cups oats
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons cinnamon
- 1 1/3 cups milk

- 1/4 cup light syrup
- 1 large apple, diced, microwaved for 1 minute

Instructions
1. Preheat oven to 375 and spray a baking dish with nonstick spray.
2. In a bowl, combine all ingredients except pecans and mix well.
3. Top with pecans.
4. Pour into a baking dish and bake in the oven for 20 minutes until oats are set.

The holidays can be a stressful time due to having so much to do in so little time! This year, we are not hosting Christmas Day like we usually do so we can relax a little bit. I am looking forward to decorating my house for Christmas right after Thanksgiving, picking out a fresh tree from my parent's farm, putting on some Christmas music, and lighting some holiday candles. This apple pecan baked oatmeal gives my house a delicious holiday scent that I love!
