Healthier Chicken Salad
Healthier Chicken Salad is super easy to make and full of flavor with celery, grapes, pecans and green onion! The dressing is protein rich with Greek yogurt and hummus.
Until the last year or so, I was never a big fan of chicken salad. The reason is because I do not like mayonnaise very much. I kind of thought that that was the only way to make it until I realized that there were healthier ways. I love the grapes, celery and nuts in chicken salad and think that it is so good on whole-grain bread, a wrap or a croissant.
This recipe is so easy to make and can be made ahead of time. If you are a fan of meal prep like I am, then you will love making a big batch of this chicken salad for the week ahead. You can serve it on bread, a wrap or a croissant. Or, you can have it over a bed of lettuce or serve it with whole-grain crackers.
This can be served for a hearty snack, lunch or dinner. If you like, you can also add fresh apples or dried cranberries or cherries. You can use almonds or walnuts instead of pecans. An uncommon way to serve this that my mom made growing up is serving this chicken salad in half of a small cantaloupe. It is so good! It is perfect for serving guests because it is really pretty.
Skipping the mayonnaise and using Greek yogurt and hummus are much healthier options that still tastes great. I love substitutions that make the food healthier but it has to still be super tasty. This recipe delivers.

Healthier Chicken Salad

Servings: 4
Ingredients
- 1 pound chicken breasts, cooked and diced
- 1 cup celery, finely diced
- 1 cup grapes, halved
- 1/4 cup green onion, diced
- 1/3 cup toasted pecans, chopped
- 1/3 cup plain Greek yogurt
- 1/3-1/2 cup hummus
- Serve on quality bread, wrap or croissant.
Instructions
Add all ingredients to a bowl and mix well. Serve immediately or store in the fridge for a few days.
