Caribbean Grilled Chicken Salad
Caribbean Grilled Chicken Salad is made with a flavorful dry-rubbed grilled chicken, juicy mangoes, red peppers and black beans with lime vinaigrette!
With summer almost here, I am making all kinds of fun dinner salads or anything with loads of vegetables really! I saw some different salads with mangoes on them over the winter and could not wait to make a huge salad when it was finally warmer.
Mangoes make a great salad topper because they are sweet and full of vitamins A and C. They also have fiber, vitamin B6 and copper as well as a little potassium and vitamin K. Beans are packed with fiber and protein and are perfect on a salad. Red peppers are rich in vitamins A and C.
I made this recipe using mostly Door to Door Organics produce which is always so fresh and delicious. This was my first time trying their boneless skinless chicken breasts and they were awesome grilled up on my salad. I was also surprised to see all of the spices that they sold which are great for the Caribbean flavors in this salad.
This recipe turned out awesome and tasted like one word: summer! It was perfect. I could see myself making a salad like this a couple of times per week all summer long when I do not want to turn on the oven or stove for cooking. We use the grill almost daily in the summer and this recipe is a great one.

Caribbean Grilled Chicken Salad
Prep Time: 10 minutes
Cook Time: 10 minutes
Servings: 4
Ingredients
- 2 teaspoons onion powder
- 1 teaspoon ground thyme
- 1 teaspoon all-spice
- 1/4 teaspoon cayenne pepper
- 1 teaspoon paprika
- 1/4 teaspoon cinnamon
- 4 small boneless, skinless chicken breasts
- 2 heads romaine lettuce, chopped
- 1 red bell pepper, thinly sliced
- 1 mango, sliced
- 1 cup black beans, drained and rinsed
- 1/2 red onion, finely diced
- Juice of 1 lime
- 1 teaspoon grated lime zest
- 2 tablespoons olive oil
- 1/2 teaspoon black pepper
Instructions
1. Combine all spices and mix together. Rub dry mix on chicken breasts.
2. Fire up the grill and cook chicken until thoroughly cooked.
3. Toss together all salad ingredients.
4. Whisk the lime vinaigrette ingredients together.
5. Slice the chicken into strips and top on salad.
