These Grilled Pork Tacos with Pineapple Salsa are perfect for a quick dinner and full of fresh flavors!
During the week, meals must be quick. After a long day at work, we do not feel like making an elaborate meal usually. Therefore, I want something that can be made in 30 minutes or less. Adalyn is at an age where she does not technically need me to hold her 24/7 or anything but she gets pretty whiny around dinner and my goal is to get our food to the table stat!

Now that it is getting hotter out, I have another meal requirement. It must not make the house 1000 degrees. This means limiting the oven and stove as much as possible. In the summer, I grill as much as possible or have cold meals such as entree sized salads.
These grilled pork tacos are an awesome dish because not only are they easy to make, they are also delicious, full of flavor and make the perfect summer meal. I chose pork because I like to switch up what kind of meat that I am using and as long as it is lean, I am happy using it. Troy and I are new to loving corn tortillas. We used to always prefer flour but over the last year, have come to love corn tortillas so much more.
I had never made pineapple salsa before and am thrilled with how delicious it is. I made extra for a snack to have along with tortilla chips. So good! The combination of the sweet pineapple along with the savory vegetables is delicious. This meal is perfect for any day during the week when you want a healthy and quick meal that is packed full of flavor.
Grilled Pork Tacos with Pineapple Salsa
Prep Time: 10 minutes
Cook Time: 10 minutes
Servings: 4
Ingredients
- 1 pound pork tenderloin, trimmed
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Juice from 1 lime
- 8 corn tortillas
- 1 cup pineapple, diced
- 1 tomato, diced
- 1 red bell pepper, diced
- 1/4 cup cilantro, diced
- 1/2 red onion, chopped
- 2 tablespoons lime juice
- 1/2 jalapeno, finely diced
Instructions
1. Mix together spices for rub. Pour lime juice over pork and rub with spices.
2. Turn on grill and cook pork until cooked through flipping once, about 8-10 minutes total.
3. Combine ingredients for pineapple salsa and mix well.
4. Grill tortillas until hot.
5. Slice pork and assemble tacos by adding pork and pineapple salsa to tortillas. Enjoy!
