Salted Caramel Baked Oatmeal
Salted Caramel Baked Oatmeal topped with bananas and toasted nuts makes the perfect cozy breakfast! It tastes indulgent but is nutritious and filling.
Since Adalyn was born, life has been a little crazy! Becoming a parent is no joke and with a little one, you always have something going on. Between sleep deprivation, feedings all through the night, chasing after an energetic little one, life can be very full. Luckily, Troy and I love it and being a parent is one of the best things that have happened to us.
We say that once Adalyn turned 1, things finally settled down some. She eventually started sleeping better (*knock on the wood*) and we found our groove with parenting. Troy and I found time for each other which is so, so important to me. My marriage comes first and taking time for each other is essential for a healthy and strong relationship.
A couple of the ways that we spend quality time together are by having nice and relaxing weekend breakfasts together. Troy usually cooks breakfast for us as it has become a tradition that we have been doing for about a year. Sometimes, when I want to make something for breakfast, I will cook. I love these slow weekend mornings that make the perfect family time.
We love joking with Adalyn while she eats. We play peek-a-boo, hide, wink at her, etc. It is one of Troy and I's favorite times of the day. I made this Salted Caramel Baked Oatmeal for a little indulgent tasting (but actually quite healthy) breakfast for us one weekend morning. It turned out great!
Another favorite thing that we do together is relax and have a cup of coffee together. We love the fresh coffee that our Keurig makes and after our weekend breakfasts, we make a cup of coffee and sit together, play with our daughter and just enjoy our time as a family.

Salted Caramel Baked Oatmeal
Prep Time: 5 minutes
Cook Time: 20-25 minutes
Ingredients (Serves 5)
- 3 cups old fashioned rolled oats
- 1 1/2 teaspoons baking powder
- 1 teaspoons cinnamon
- 1 cup milk
- 1/3 cup salted caramel coffee creamer
- 2 eggs, beaten
- 3 tablespoons cup maple syrup
- 1 banana, sliced
- 2 tablespoons nuts, chopped
Instructions
1. Preheat oven to 375 and spray a baking dish with nonstick spray.
2. In a bowl, combine all ingredients except for bananas and nuts and mix well.
3. Pour into a baking dish and bake in the oven for 15 minutes.
4. Remove from oven and top with bananas and nuts.
5. Bake for another 5-10 minutes until oats are set. Top with syrup or nut butter.
