Chicken Pesto Tortellini with Kale and Peas
Chicken Pesto Tortellini with Kale and Peas is ready in just 20 minutes and is a flavorful and healthy meal that the whole family will love!
I wanted to make a simple recipe that would be perfect for the holidays that is not only delicious but pretty healthy too. I used the last of my summer homegrown cherry tomatoes and peas for a boost of nutrients. What is nice about this dish is that it is a one-dish meal. You don't need any side dishes with it which makes it even simpler.
Chicken Pesto Tortellini with Kale and Peas
Ingredients:
1 package cheese tortellini
1 tablespoon olive oil
2 chicken breasts
1 cup frozen peas
2 cups finely chopped kale
2 cups finely chopped kale
1/4 cup pesto
2 tablespoons parmesan cheese
Directions:
1. Over medium heat, add olive oil to a pan. Add chicken and sauté until chicken is cooked though and lightly browned. Cut into strips.
2. Meanwhile, prepare tortellini according to directions. Once cooked through, drain water.
3. Toss together tortellini, chicken, peas, kale, pesto, and Parmesan cheese. Mix well.
Enjoy! See how easy that was? Dinner in a flash. This dish turned out awesome! Adalyn loved it as did I. My husband is crazy and doesn't like pesto so I made the same dish for him using tomato sauce. He enjoyed that!
