Mandarin Dream Smoothie + Vegetable Frittata
This Mandarin Orange Dream Smoothie takes 2 minutes to make and tastes like dessert but as actually very nutritious!
This Vegetable Frittata is so simple to make and customizable based on your preferences and what you have on hand!
During the summer, we love to eat lots of delicious and fresh foods. I created a meal that would be perfect for a weekend breakfast or brunch. It is full of fruits and vegetables and gives you a boost of protein and fiber. Not to mention, both of these recipes are delicious.
As I have written about recently, I love smoothies! Sometimes I can be a bit lazy with making a smoothie and grab other foods instead but am always happy when I have a fresh and cold, nutrient packed smoothie to drink. I was sent a recipe from DOLE to make called the Mandarin Dream Smoothie. I put my own spin on it as I do with every single recipe that I look at. Something in me makes me want to always create something different.
To go along with the smoothie, I made a healthy vegetable frittata packed full of a variety of vegetables. These pair well together and would be awesome eaten outside during a summer brunch. Troy and I enjoy celebrating everything, even little day-to-day things and making this nice meal on a Saturday morning is a great way to celebrate the start to the weekend.
Here is the original recipe from DOLE:
1/2 oz DOLE canned pineapple juice
4 oz plain Greek yogurt
6 pieces DOLE mandarin oranges
Ice cubes
Many options: huge handful of baby spinach or kale, frozen unsweetened mango chunks, protein powder, milk, etc.
The DOLE pineapple juice provided a delicious sweet, tropical flavor to the smoothie. It is 100% juice not from concentrate. I found it at my local Kroger in the juice aisle.
Ingredients
2 cups diced vegetables (I used mushrooms, red potatoes, yellow pepper, zucchini and green pepper)
1 tablespoon olive oil
5 eggs
2 tablespoons milk
1 tsp garlic powder
1/2 tsp black pepper
1/3 cup shredded cheddar cheese
1 green onion, diced
Directions
1. Cook potatoes in microwave until soft and chop into bite sized pieces.
2. Heat oil in pan and add vegetables. Stir occasionally until soft.
3. Meanwhile, whisk together eggs, milk, garlic and pepper.
4. Once vegetables are soft, spread out evenly in pan.
5. Turn oven broiler on high.
6. Pour egg mixture over vegetables. Cook until bottom is cooked.
7. Top with cheddar cheese and put in broiler for about 3 minutes until eggs are fully cooked and cheese is melted.
8. Top with green onions and serve.
Enjoy! We loved the addition of the potatoes especially in this recipe. You can feel free to use whatever vegetables you have on hand.
