Easy Fresh Mexican Soup

We love Mexican food and eat it at least one time per week. It is so versatile and most of the meals are quick- something that is important to us. This soup recipe can be customized based on what you have on hand. For example, if you have leftover chicken or ground beef, use that. If you don't have any meat, use beans and/or rice instead. This particular version is vegetarian.
The thing about taking shortcuts in the kitchen is being open to using the ingredients that you have on hand. If you do not have something in a recipe, swap it for something else. This saves time from having to go to the grocery store and money.

Easy Fresh Mexican Soup
Ingredients:
Soup
1 container Mexican Style Tomato Campbell's Soup for Easy Cooking
1 can no-salt added diced tomatoes
1 can low-sodium black beans
1 cup water
2 tsp chili powder
1 tsp cumin
2 tsp garlic powder
1 cup water
2 tsp chili powder
1 tsp cumin
2 tsp garlic powder
Toppings (Based on what you have on hand)
-Diced tomatoes
-Shredded cheddar cheese
-Plain Greek yogurt or low-fat sour cream
-Hot sauce
-Avocado
-Cilantro
-Diced bell peppers
-Onions
-Green onions
-Green onions
-Sliced olives
Directions:
1. Combine soup, diced tomatoes, beans, water and spices in a pot and cook over medium heat.
2. Meanwhile, get all toppings together that you are going to use and chop as needed.
3. Stir soup and cook for about 15 minutes until mixture is hot and flavors are well blended.
4. Top with your favorite toppings and serve.

I created this recipe using one of the soups from the Campbell's Soups for Easy Cooking line. This makes cooking a meal easy and gives me a head start on my meal. After work, Troy and I do not want to put a lot of time into cooking but want to spend time with our little girl who we have not seen all day instead. These shortcut soups help to make dinner quickly and have weekend meals on a weeknight schedule.
