Oatmeal Trail Mix Cookies

Oatmeal Trail Mix Cookies
Ingredients:
2 tablespoons ground flaxseed
1 1/2 cups oats
1/2 cup whole-wheat flour
1/2 cup almond flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup trail mix (I used one that contains a variety of dried fruit and nuts)
1 cup unsweetened applesauce
1/2 cup nut butter of choice
2 tablespoons oil (I used olive)
5 packets Truvia
5 tablespoons water
Directions:
1. Preheat oven to 350 degrees and line cookie sheets with nonstick paper or parchment paper.
2. Combine all ingredients and mix well.
3. Drop the dough by the spoonful onto the cookie sheet.
4. Bake for 15 minutes or until slightly browned.
Considering that these are a lot healthier than your typical cookie, they tasted awesome. When they first came out of the oven, they were a bit crumbly. Later that day, they held together better. These store well and stayed soft for 3+ days.
For this recipe, I used Truvia which is a brand of stevia and liked how it turned out. I don't have anything against sugar in a recipe but the addition of Truvia cuts down on sugar and calories. This is a good choice for diabetics who need to watch the amount of carbohydrates that they consume. You get the best of both worlds: a sweet flavor without the sugar.

I brought these cookies to my parent's farm after Christmas and my sister really enjoyed them as did my husband. I would definitely make these again in the future.
My husband and I enjoyed these cookies with a big mug of Bigelow vanilla chai black tea. This tea is absolutely delicious and full of flavor. It does not need anything added to it.
