Vegetarian Stuffed Squash + #BeyondMeat Giveaway

I have posted similar recipes in the past for stuffed squash and wanted to share this recent one. Stuffed squash is one of my favorite meals in the world because it is full of flavor, fresh and healthy. My parents have been growing a ton of squash and zucchini and have been kind to share them with Troy and I.
I decided to use these yellow squash for one of my favorite summer recipes, vegetarian stuffed squash. I was recently asked to create a recipe using Beyond Meat products. I used the beefy crumbles and was happy with the results.
Vegetarian Stuffed Squash
Ingredients:
4 large squash halved and seeds scooped out (I used a homegrown variety)
1 cup uncooked couscous, rice, quinoa, etc.
1 package Beyond Meat beefy crumbles
1 diced onion
1 tsp garlic powder
1 tsp onion powder
1 tsp black pepper
2 tsps allspice
2 cups tomato sauce (I used a homemade sauce but any will do)
Directions:
1. Cook grains according to directions.
2. Meanwhile, brown beefy crumbles in a separate pan and stir in all spices. Add onions and saute until onions are cooked through.
3. Combine the cooked grains with the beefy crumble mixture.
4. Place squash halves on the bottom of a baking dish and fill each with 2 scoops of the meat/grain mixture.
5. Cover with tomato sauce (be generous as this is what keeps the mixture moist.
6. Bake covered at 375 for 45 minutes and uncovered for 15 minutes or until squash is cooked thoroughly.
This meal turned out delicious! The Beyond Meat beefy crumbles were a good addition and resembled meat very well. Due to the spices, tomatoes and onions, you could not really detect the flavor of the crumbles on their own. A 1/2 cup serving of the crumbles is only 90 calories, 4.5 g fat, 10 g protein and 290 mg sodium. These crumbles are gluten-free and soy-free and made from non-GMO pea protein isolate.
They are lower in both calories and fat than beef. A big difference is that they have no cholesterol compared to red meat which can be high in cholesterol.
My sister's new boyfriend is a vegetarian so this would be a great option to make when he comes around. Also, my husband and I are not vegetarians but we really enjoy eating vegetarian meals.
