Thai Peanut Kale Salad
Last weekend at my parent's house, we had a ton of fresh vegetables to use so I got creative and created this Thai peanut kale salad. It turned out great! I would use the dressing over another lettuce such as spinach or romaine too.
Salad
1 large bunch of kale torn into bite sized pieces
1/2 cup chopped carrots
2 shoots diced green onion
1/2 large diced cucumber
Dressing
1/4 cup chopped fresh mint leaves
1/4 cup peanut butter
Juice from 1 squeezed lime
1 tablespoon olive oil
2 teaspoons soy sauce
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/3 teaspoon black pepper
Directions
1. Combine all chopped vegetables in a large bowl.
2. Melt peanut butter in the microwave until runny.
3. Combine all dressing ingredients and mix well.
4. Pour salad dressing over the kale mixture and mix well.
*For best results, let this salad sit and marinate for at least an hour. It can last in the fridge up to 2-3 days and does not get soggy.
For a quick, healthy, fresh, and tasty meal, this recipe is awesome. I am definitely going to be making it again and would highly recommend it to anyone!
