Lucky Leaf Cranberry Cherry Crisp
Lucky Leaf pie filling is made through Musselman's who I have enjoyed working with for over a year now. I was sent some of their cherry pie filling and made a delicious dinner of BBQ pulled chicken and potatoes, roasted green beans, and cranberry cherry crisp. I actually have never made a crisp before and it turned out so well that I will definitely make it again. I wanted to make a nice Friday night dinner for my husband and I and was able to do so with the help of Lucky Leaf! Also, this recipe would be amazing for Thanksgiving.
Filling:
1 large can Lucky Lead Cherry Pie Filling
2 cups frozen unsweetened whole cranberries
Topping
1/2 cup whole wheat flour
2/3 cup oats
2/3 cup crushed shredded wheat cereal
1/4 cup shredded coconut
1 tablespoon chia seeds
1/2 teaspoon cinnamon
1/2 cup brown sugar
1/2 cup cold butter
1/4 cup water
Directions:
1. Combine cherry pie filling and cranberries and spread in a baking dish.
2. Combine all of the topping ingredients and mix well. Cut in butter. Mix should be crumbly.
3. Sprinkle topping over filling.
4. Bake at 350 for 25-35 minutes until fruit filling is bubbling and topping is lightly browned.
This recipe is very easy to make and is quick too! I found a traditional recipe online and made it quite a bit healthier. I cut the amount of butter by 1/4 cup, the sugar by 1/4 cup, used whole wheat flour, and didn't add any additional sugar for the cranberries added. For a healthified dessert, it certainly does not taste that way!
