Grilled BBQ Chicken Pizza

This is a guest post brought to you from my mom. She is a great cook and made this pizza for us last week.  It was delicious. Side funny story: our oven broke right after she got done preparing the pizza. We had to grill it right in the pan. It turned out great still as you can see but I would not recommend grilling it.

Ingredients:
2 loaves frozen bread dough
2-4 boneless, skinless chicken breasts
1 sweet onion (such as Vidalia or Walla Walla), sliced
1-2 green peppers, sliced
1 small-med. bottle BBQ sauce (Sweet Baby Ray's is a good pick)
1 1/2-2 cups provolone cheese, shredded or in strips
Directions: 
Using a large cookie sheet, spray with non-stick spray. Thaw bread dough and let rise on cookie sheet (this can be done overnight or in the morning, depending when u want to have pizza).  Grill chicken and veggies.  Shred chicken. Put BBQ sauce on top of risen bread dough.  Add shredded chicken and veggies, then cheese.  Bake at 350 F for approx. 40-50 min., depending on your oven. Great either hot or room temperature.

I definitely would make this pizza again and think you should try it too! If you are a vegetarian, it would be just as good without the chicken.

  2. can't wait to try this tonight. Making a couple of modifications: whole wheat pizza crust with jalapeno cheese instead of provo and dropping the onions (my sacrifice because I love them, hubby hates them!). Thanks for the meal!
