BBQ Chip Chicken
Tonight, Troy made an awesome dinner! He used my new Better Homes and Gardens cookbook as an inspiration and came up with this.
BBQ Chip Chicken
Ingredients:
-Two boneless skinless chicken breasts defrosted
-1 egg
-2 tablespoons milk
-1/4 cup breadcrumbs (he used Italian)
-1 handful of BBQ ruffles chips
-A few dashes of paprika
Steps:
1. Cut off any visible fat on the chicken. Crack an egg and beat with milk using a fork.
2. Crush chips and mix with the breadcrumbs and paprika.
3. Dip the chicken in the egg mixture and then in the chip mixture.
4. Bake at 375 degrees for 45-55 minutes.
This chicken was amazing and I ate the whole huge piece (which is amazing because I usually can only eat a little chicken). We also had a salad with romaine lettuce, tomatoes, cucumbers, and crumbled cheddar cheese. I topped mine with balsamic vinegar. It was a great dinner and I am full now!
