Baked Chicken Taquitos

Baked Chicken Taquitos are filled with shredded chipotle chicken and melted cheese and are perfectly crispy. Topped with tomatoes, jalapeno, lettuce, sour cream, cheese and green onion for a delicious appetizer or meal!
I love trying to make every Mexican dish that I know of and make it lighter. I have been wanting to make baked taquitos for quite awhile and got the opportunity to do so one day when I had a huge batch of chipotle shredded chicken on hand. They turned out amazing! My husband's family is Mexican and makes all kinds of delicious dishes and my whole family enjoys eating them.
I made a batch of these with corn tortillas and a batch with flour tortillas. The batch with the corn tortillas cracked so I chose to post the flour ones. They still taste really good but just so you know, if you use corn tortillas, they may break and won't look as pretty as these. It's up to you! These baked taquitos pair perfectly with an ice cold Michelob ULTRA. They are light and tasty just like the beer and make the perfect pair with the taquitos. My husband grew up making tamales with his family whereas I haven't braved tamales myself yet.
For the chicken, I added a bunch of boneless, skinless chicken breasts to my slow cooker and towards the end of cooking, I added in chipotle spice, garlic powder, onion powder, cumin and chili powder for a flavorful chicken filling. To top the taquitos, I diced up a bunch of lettuce, tomatoes, red bell peppers, jalapeno, shredded mozzarella cheese and green onions. I also dipped them in sour cream, salsa and guacamole. So good!
I'm not one to fry a dish so I baked these and they turned out wonderfully! I just gave them a good spray of nonstick spray and they crisped up really well. You can feel free to make these with pork, beef or even with refried beans as well. I added a bit of cheese to each taquito because everyone loves melted cheese and to help the taquito stay together.

INGREDIENTS
- 2 cups shredded chicken
- 1/2 teaspoon chipotle powder
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 cup shredded mozzarella cheese
- 12 flour tortillas
- Toppings
- Diced tomato
- Diced green onion
- Diced red bell pepper
- Shredded cheese
- Sour cream, salsa, guacamole
- Lettuce
- Jalapeno
INSTRUCTIONS
- Preheat oven to 425 degrees. Spray a baking pan with nonstick spray
- Mix cooked shredded chicken with spices.
- Take a tortilla and fill with about 3 tablespoons of shredded chicken and a pinch of cheese.
- Roll tortilla tightly and place open side down on pan. Continue until all ingredients are used up.
- Spray taquitos generously with nonstick spray to help them brown. Bake for 20 minutes until brown and crispy.
- Top with toppings of choice.
Enjoy!
*You can cook the chicken in a slow cooker and add the spices right in if desired.
A cold beer goes best with these crispy taquitos and I decided on Michelob ULTRA to go with this meal. The beer and the taquitos paired perfectly together. I like to have a drink every now and again and like a beer that is not too high in calories. With trying to live a more active lifestyle, this beer is perfect with only 95 calories and 2.6 carbs! I love to go walking and exercise and do not want a 300 calorie craft beer so this Michelob ULTRA is the perfect beverage. What I like also is that you can have a couple and not feel too full. My husband likes having one in the evening after his run.
I love walking on the treadmill in the winter on an incline and lifting weights and don't want my efforts to be derailed by a drink!
