  • Lemon artichoke chicken is a favorite dish of mine! I love it all different ways: chicken piccata, sheet pan lemon artichoke chicken, sauteed or any way really. My mom has been making dishes like this for years and it is one of our family favorites. I decided to make it super simple by throwing everything for dinner on a sheet pan and baking it. It doesn't get much simpler than that!

You can roast some other veggies along with it such as potatoes, green beans, asparagus, broccoli or anything else you enjoy. We chose to get Ava right after we got married. We were living in a one bedroom apartment and Troy and I had opposite work schedules and I was alone a lot during the day. I was totally bored and we decided that we wanted a dog to love and take care of. Well, our apartment complex did not allow dogs but we thought we were slick and got one anyways. When we went to pick out Ava, we had planned to get her sister but that little manipulator weaseled her way into our hearts and never left! She was so sweet and cuddly to Troy that he said he could not put her down and had to have her!

We took her home and said "no dogs in our bed!". That night, Ava cried from her crate all night long. After that night, we let her sleep in our bed and she never has left!! We would sneak her out of the apartment so that we would not get caught but about 2-3 months later, we got caught and ended up having to move! It was totally for the best as I then got a job that helped shape my career and life was totally awesome then.

In our new house that we bought, we felt like Ava was lonely and needed a friend. We found Jaxen online and went to get him. We brought Ava along because she was the big sister and needed to like him. By the way, Ava totally tricked us and is conniving and manipulative but Jaxen is totally sweet and such a good dog. Those two are best friends forever and I am glad that they have each other. We love our crazy duo so much and can't imagine life without them (unless they are barking their heads off when the kids are sleeping- then, I'm not such a fan!).

Sheet Pan Lemon Artichoke Chicken

Servings: 4
Prep time: 5 minutes
Cook time: 30 minutes

Ingredients:

1 1/2 lbs boneless, skinless chicken breasts
2 tablespoons butter, melted
Juice from 1 lemon
2 minced garlic cloves
1 teaspoon fresh ground black pepper
1 can artichoke hearts, drained
Optional: Baby potatoes and 1 tablespoon butter
Optional: Lemon slices

Instructions:

1. If cooking baby potatoes, preheat oven to 400 degrees. Toss baby potatoes in 1 tablespoon of butter and cook for 10 minutes on a baking sheet. If not cooking potatoes, preheat oven and skip this step.
2. Drizzle chicken breasts in butter and place on baking sheet and cook for about 20 minutes until chicken is cooked through. 
3. Halfway through, flip chicken and drizzle with lemon juice, garlic and black pepper. Add artichoke hearts to pan after flipping chicken. Check to make sure that chicken is cooked through and that potatoes are soft. Garnish with lemon slices if desired.
