Kale Salad with Pomegranate, Cheddar and Apples
Kale Salad with Pomegranate, Cheddar and Apples features fresh kale, pomegranates, apples and cheddar cheese with a homemade apple cider vinaigrette for the perfect hearty salad!
This year, I'm finally admitting it to myself: I am not the hugest pumpkin spice fan. I used to be obsessed but now, it doesn't excite me like it used to. Instead, I'm am loving lots of other fall foods and drinks such as doughnuts and cider, fall salads, homemade chili and more. It it really fun to make all things fall and enjoy each season that comes along.

One day, I was sitting at my computer trying to think of a fun fall recipe to make and this salad came to me. I had just bought a bag of small pomegranates, had a bunch of apple cider in my fridge and a million fresh orchard apples that we had recently picked, a huge bag of kale and a block of cheddar cheese. This salad came to me and I knew that it would be perfect for fall.
It is super easy to make and can be made the day before because kale is very hearty and will not wilt. Don't skip the massaging step because it helps to soften the kale making it easier to eat. You can feel free to add your favorite protein as well such as baked or grilled chicken to make it a complete meal.
Prep time: 10 minutes
1 cup pomegranate arils
1/3 cup cheddar cheese, chopped
1 large honeycrisp apple, sliced
Apple Cider Vinaigrette
For this recipe, I used Rubbermaid FreshWorks Containers to help keep my produce fresh through the week before I was ready to use it. I go grocery shopping about once a week and sometimes, produce goes bad before I am able to use it. I hate wasting food so I try to stop food waste as much as possible. When I get home, I transfer certain foods to these containers: for this recipe, I kept the kale in one of these and the pomegranate arils in another.
They help to keep produce fresh up to 80% longer*. They use Rubbermaid FreshVentTM technology to keep produce lasting longer than regular produce packaging. The lid helps to regulate oxygen and CO2 in and out of the container to keep produce fresh. It also has a CrispTrayTM at the bottom which helps keep moisture away and reduce food spoilage. I found these to work really well to help keep my produce fresh. A couple of days later, it was still in perfect condition. I especially look forward to trying it with strawberries.
The Rubbermaid FreshWorks Produce Savers come in a few sizes: large square, long rectangle, small rectangle, small, medium and large which can fit up to 17.3 cups! Some of the produce that benefits from these containers are tomatoes, asparagus, zucchini, green beans, berries, strawberries and leafy greens. They are dishwasher safe and are BPA-free.
