Grilled Corn Avocado Toast

Grilled Corn Avocado Toast features mashed Avocados From Mexico with garlic and lime juice on toast with grilled corn, sliced tomatoes, jalapenos and red onion for a delicious meal or snack!
Did you know that it is Hispanic Heritage Month? Because I am part of a Hispanic family, my husband, daughter, son and I make sure to celebrate. Troy is of Mexican descent, so we love celebrating heritage in our household and often talk about different nationalities and cultures that make up families like ours. I am mostly Polish and German so we make sure to celebrate those nationalities as well.

Growing up, my mom had "Ethnic Night" every Tuesday where we had a meal from a different country and learned about that country. It was really fun and I hope to do the same thing with my kids one day. My siblings and I would take turns choosing a country and my mom would research the food from there and make an authentic meal. She would often make a quiz about the country or read us information about the culture, the people, the food, etc. It was awesome.
With Hispanic Heritage Month, we are talking to Adalyn about her Mexican heritage. We eat a ton of Mexican food and are proud of being Mexican. Adalyn tells me all the time that she is proud to be Mexican. She loves saying it! It is super cute. To celebrate the heritage, we often go to Mexican Town in Detroit for Mexican food and ingredients. My husband's family also makes Mexican food for most gatherings and we all love it!
I wanted to make a recipe that celebrates my family's Mexican heritage. I chose this Grilled Corn Avocado Toast and it is excellent. I drizzled a little olive oil on the corn, grilled it and sliced it off the cob. Then, I toasted the bread and sliced some cherry tomatoes, red onion and jalapeno. I also mashed up some avocado with some lime juice, garlic, salt and pepper for a quick guacamole. Then, you just spread the guac on the toast and add all of the toppings.
This could be enjoyed for breakfast, lunch, dinner or a snack. It is very versatile. It comes together in no time and the corn can be grilled ahead of time to save time if you like.
Grilled Corn Avocado Toast
Servings: 2
Total time to make: 15 minutes
Ingredients:
1 ear of corn
2 teaspoons olive oil
1 large Avocado from Mexico
1 tablespoon lime juice
1 clove garlic, minced
Sprinkle of salt and pepper
1/4 cup cherry tomatoes, halved
1 tablespoon red onion, thinly sliced
1/2 jalapeno, thinly sliced
1 tablespoon lime juice

4 slices Bimbo® Bread —I used Soft Wheat
2. Mash the avocado with lime juice, garlic and salt and pepper.
3. Slice the tomatoes, jalapeno and red onion.
4. Toast the bread. Top toast with avocado spread, grilled corn, tomato, onion and jalapeno.
Enjoy!
To further celebrate my family's Mexican heritage, we made sure to buy Avocados From Mexico for this recipe. I love using Avocados From Mexico in recipes because they are always fresh and always delicious and so versatile. Both of my kids had avocados for one of their first foods and they love them! They can be eaten for any meal of the day or for a snack and they can be made sweet in a smoothie or savory in any dinner dish.
Instructions:
1. Drizzle the corn with olive oil and grill for 5 minutes on each side. Cut kernels off of cob.2. Mash the avocado with lime juice, garlic and salt and pepper.
3. Slice the tomatoes, jalapeno and red onion.
4. Toast the bread. Top toast with avocado spread, grilled corn, tomato, onion and jalapeno.
