Blueberry Banana Zucchini Bread
Blueberry Banana Zucchini Bread is a moist and healthy bread made with whole-wheat flour and the season's best blueberries and zucchini.
When I think of August, I immediately think of blueberries and zucchini. Both are very plentiful this time of year. I do not have enough room in my garden to grow zucchini (each plant takes up a bunch of room) but my parents grow it and so do some friends I know. This often results in having a ton of zucchini and figuring out what do with it it all. If you go to the farmer's market this time of year, you will find a ton of zucchini for super cheap because once it starts growing, it grows like crazy.
As for blueberries, my family often goes blueberry picking in August. Unfortunately, a couple of years ago, the blueberry farm near my parent's farm closed so we could not go there anymore. When we went on vacation to Ludington, MI last year, we had to go blueberry picking because the West side of the state of Michigan is well known for its blueberries. They were so, so good!
I wanted to make this easy blueberry banana zucchini bread as a way to use up some of this delicious summer produce when you have too much (or if it just sounds good and you go to the store for all of the ingredients, that works too!). I used whole-wheat flour to make it more nutritious and it works out really well. This bread is very low-fat for those of you who may be trying to watch your fat intake. It is so moist and delicious- you will love it!

Blueberry Banana Zucchini Bread
Prep Time: 10 minutes
Cook Time: 35 minutes
Yield: 12 slices
Ingredients
- 2 cups whole wheat flour
- 1 scoop vanilla protein powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 2 medium ripe bananas, mashed
- 1/3 cup maple syrup
- 1 egg
- 1 teaspoon vanilla
- 1/2 cup applesauce
- 1 large zucchini, grated
- 1/3 cup milk
- 1 cup blueberries
Instructions
1. Preheat oven to 350 degrees. Spray a bread pan with nonstick spray.
2. Mix together all ingredients and stir well.
3. Pour into bread pan and bake for about 35 minutes until when a toothpick is inserted, it comes out clean.
4. Remove from oven and let cool for 15 minutes. Remove from pan.
7. Slice and enjoy!

Ahh I love banana breads! I shared a recipe on my blog this summer, but didn't think to add zucchini and blueberries to it. Will definitely be giving this a try :)
