Marinated Grilled Chicken and Vegetable Wraps
Marinated Grilled Chicken and Vegetable Wraps feature marinated balsamic chicken and vegetables, hummus and pepper jack cheese in a wrap using leftover chicken and vegetables for lunch in 5 minutes!

We have been using the grill so much this summer! At least twice a week, the grill is fired up and cooking us up something super delicious. I can't get enough of it. My favorite thing to make is anything with grilled veggies. Any type of vegetable that you can grill, we have been grilling it. Peppers, onions, carrots, potatoes, zucchini, eggplant, green beans, asparagus, etc. etc. I love it!
I first made these Grilled Chicken and Vegetable Wraps for my cousin who came to visit us at a nearby park for a picnic. They turned out so, so good and I immediately said that I needed to make them again for the blog. They feature leftover grilled chicken and vegetables.
We recently had a bunch of leftover veggies and grilled chicken from and I chopped everything up, spread some hummus on a whole-wheat wrap and added pepper jack cheese. Just roll it up, cut into pieces and enjoy.
To give proper credit, my brother made these grilled vegetables and they are the best that I've ever had. They are so, so flavorful! I can't stop eating them (which is good because we have tons of leftovers). He marinated them in a balsamic vinaigrette and it was the most amazing summer side dish. My brother is awesome at grilling. I'm so glad that I made these wraps with them because they are delicious. You can feel free to use your favorite vegetables for these.
What I love about these is that they are totally customizable based on what you have on hand. Go to your favorite farmer's market and pick the best looking produce and add it to these which will give you the best tasting quesadilla possible. I serve them cold because I think that they taste the best that way but you can warm them up if you prefer. These are amazing to take to a picnic and hold up very well.

Marinated Grilled Chicken and Vegetable Wraps
Prep Time: 5 minutes
Cook Time: 12-14 minutes
Servings: 2
Ingredients
- 1/2 small zucchini, sliced in strips
- 1/2 summer squash, sliced in strips
- 1 large portobello mushroom
- 1/2 eggplant, sliced
- 2 medium tomatoes
- 2 boneless skinless chicken breasts
- 1/3 cup balsamic vinaigrette
- 2 whole-grain wraps
- 1/4 cup hummus
- 2 slices Sargento Pepper Jack Cheese
Instructions
1. Marinade vegetables in balsamic vinaigrette and chicken in vinaigrette (separately) for at least 20 minutes.Grill until cooked through.
2. Refrigerate vegetables and chicken until cold (or overnight). Dice vegetables and chicken.
3, Spread wrap with hummus over entire wrap. On the left side, place chopped vegetables and chicken. Slice cheese in half and lay on wrap.
4. Roll-up wrap and cut into pieces.
Enjoy!

For this recipe, I chose to use Sargento® Slices pepper jack cheese from Meijer. We have been loving these especially since the weather got warmer to have as snacks. They are so easy to eat because I do not have to slice them up and Adalyn loves them too (so much so that she has been going in the fridge and stealing them when I am not looking!).
The pepper jack cheese gave this wrap just the right amount of spice and flavor. If you are not a fan of spicy, feel free to swap it out for sharp cheddar cheese which I love too.
