Chicken Fajita Meal Prep Bowls
Chicken Fajita Meal Prep Bowls make the perfect quick lunch or dinner with flavorful grilled chicken and peppers, brown rice, black beans, salsa and limes!
I am a big fan of meal prepping when life is busy. Especially when it is with food that I truly love and am excited about eating. For this recipe, I purchased all of my ingredients at Walmart. I love Mexican-style food so much and recently got the idea to make chicken fajita meal prep bowls for easy meals through the week for when I went back to work after my maternity leave. When I am short on time especially, I do not want to spend a lot of time cooking. I want to spend time with what matters the most to me: my family! That is why this meal is perfect. It is ready in just 20 minutes and is perfect for leftovers and meal prep.

I debated on whether to grill the fajita ingredients, to pan fry them or to make them on a sheet pan. I would honestly switch it up using those three different methods depending on the time of year and what I am feeling like that day. Since it is currently hot out, I decided to grill the chicken and peppers for this meal so I wouldn't heat up my house. Plus, there is nothing like the way that the grill makes your food taste.
You can customize these however you like. If you prefer pinto beans to black beans, use those. Feel free to use tofu, pork or beef instead of chicken. Add tomatoes, onions, avocado, cheese or other toppings as desired. Pro tip: make the rice ahead of time and freeze in sandwich bags for rice that is ready in 3 minutes- even when it is frozen!

Or you can add them to your weekend meal prep and get them ready to go for all week. With back-to-school coming up before you know it, these would be great for those busy school days. Chicken Fajita Meal Prep Bowls
Prep Time: 10 minutes
Cook Time: 10 minutes
Servings: 4
Ingredients
- 1 pound boneless, skinless chicken breasts
- 1 red pepper, sliced
- 1 green pepper, sliced
- 1/2 yellow pepper, sliced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 teaspoons olive oil
- 3 cups cooked brown rice
- 1 can low-sodium black beans, drained and rinsed
- 1 cup salsa
- 1 lime, sliced
Instructions
1. Sprinkle half of chili powder, cumin, garlic powder and onion powder over chicken breasts.
2. Drizzle the peppers in olive oil and spices.
3. Cook chicken and peppers on the grill (use grill mat/pan for peppers or cook in aluminum foil) for about 5 minutes on each side until peppers are soft and chicken is cooked through.
4. Remove from the grill and slice chicken.
5. In storage containers, divide sliced chicken, peppers, brown rice, black beans, salsa and lime slices between 6 containers.
6. Store in refrigerator and when ready to eat, microwave for 2 minutes and enjoy!
