Strawberry Blueberry Dutch Baby
Strawberry Blueberry Dutch Baby makes the perfect breakfast or brunch dish! Made healthier with whole-wheat flour and loaded with fresh berries and ready in less than a half-hour.
Whenever I see a Dutch baby on a restaurant menu, I automatically think of the place as a little bit fancy. The truth is, that making a Dutch baby is actually not very hard at all! They are quite simple and customizable where you can make them whatever flavor you like.
I remember when I was growing up, going to a restaurant where these were their specialty. They had all different ones including savory vegetable and cheese versions and ones loaded with fresh strawberries and bananas. Each time that I went, I would get a different one. They were so good!
A couple of years ago, I made my own Apple Cinnamon Dutch Baby. It was delicious and for some reason, I never made one again until now. I crafted the idea for a Strawberry Blueberry Dutch Baby in the middle of the night when I was up with my baby. That is often when my best ideas come to me. No wonder I have such a hard time getting back to sleep once my brain starts running!
I wanted to make this Dutch Baby red, white and blue for all of the summer holidays coming up including 4th of July and Labor Day. Plus, strawberries and blueberries are so delicious right now! My whole family loved this- even my husband who is only so-so on sweet dishes. My daughter ate two big pieces. She couldn't get enough.
This Strawberry Blueberry Dutch Baby is great paired with a small sandwich such as the Sandwich Bros. of Wisconsin Flatbread Pocket Sandwiches which come in a few snack varieties including the Angus Cheeseburgers, Chicken Melts and Gyro Sliders.
If I'm on the go, I like heating these up in the microwave for a quick snack or part of my breakfast. They are small enough that you can pair them with another dish such as this Dutch Baby and it will not be too overly filling. I eat the Chicken Melts without any sauce and like a little bit of hot sauce or ketchup on the Egg White and Turkey Sausage variety.

Strawberry Blueberry Dutch Baby
Prep Time: 5 minutes
Cook Time: 20 minutes
Servings: 4
Ingredients
- Nonstick spray
- 1 cup blueberries
- 1 cup strawberries, sliced
- 3 eggs
- 3/4 cup milk
- 1 tablespoon butter, melted
- 3/4 cup white whole-wheat flour
- 1 teaspoon vanilla
- 2 tablespoons honey or syrup
- Optional: powdered sugar for topping, sliced strawberries and blueberries
Instructions
1. Preheat oven to 400 degrees. Spray an oven-safe skillet with nonstick spray (cast iron works best).
2. Spread the strawberries and blueberries evenly in the skillet.
3. Whisk together eggs and milk. Mix in butter, flour, vanilla and sweetener until smooth.
4. Pour the batter over the fruit in the skillet and place in oven. Bake for 20 minutes until Dutch baby is puffed up and golden brown.
5. Remove from the oven and serve. Top with powdered sugar, strawberries and blueberries, if desired.
