Bruschetta with Pesto Flatbread Chips
Bruschetta with Pesto Flatbread Chips make the perfect appetizer or snack with fresh tomatoes, garlic, Parmesan cheese and basil! The flatbread chips are thin, crispy and loaded with flavorful pesto.
I absolutely love bruschetta! I have made it several times myself and my sister makes a great version as well. What is crazy about it is that it only takes 5-10 minutes to make and tastes so fresh and delicious.
I was trying to think about what would make this recipe even more delicious and I thought of pesto flatbread chips. I took two thin flatbreads, spread one of them with a thin layer of fresh and flavorful pesto, cut them into pieces and baked them until they were crispy. The pesto flatbread chips tastes so good with the bruschetta! It is a perfect combination.
I made these for my husband and I for a date night at home and they were a huge hit. Just make sure that if you have them with a significant other, that they are a fan of garlic as well because you will be smelling pretty garlicky for the rest of the night! My 2 1/2 year old daughter also loved these with the bruschetta.
If you are not a fan of pesto, feel free to make these flatbread chips with just the nonstick spray and a sprinkle of garlic powder. The bruschetta is very flavorful so it will still have plenty of flavor.

Bruschetta with Pesto Flatbread Chips

Ingredients
Bruschetta
- 3 large tomatoes, chopped
- 3 cloves garlic, finely minced
- 6 basil leaves, chopped
- 1 tablespoon olive oil
- 2 teaspoons red wine vinegar
- 1/4 cup shredded parmesan cheese
- 1/4 teaspoon salt
- 1/2 teaspoon pepper
Pesto Flatbread Chips
- 4 Flatout Flatbreads
- 1/4 cup pesto
- Nonstick cooking spray
- 1 teaspoon garlic powder
Instructions
1. Preheat oven to 400 degrees. Spread pesto over two flatbreads and cover each with another flatbread. Cut into triangles.
2. Sprinkle "chips" with cooking spray and garlic powder on a baking sheet. Bake for about 10 minutes or until chips are crispy.
3. Meanwhile, mix together ingredients for bruschetta.
4. Top pesto flatbread chips with bruschetta or use them for dipping.
